Buffalo Chicken Stromboli by Pillsbury®

Reviewed: Dec. 30, 2012
I thought this was a great, quick week night meal. I made mine with blue cheese and it was good, but I think next time I'll make it with mozzarella instead for a more milder taste.

Beef Bourguignon II

Reviewed: May 5, 2012
This is a very good recipe. I didnt add the canned onions (didnt have), just added more chopped to compensate. Be sure to deglaze the pan after browning your meat with some of the red wine to get all the bits up. Will definately make again. Thanks!

Orzo and Tomato Salad with Feta Cheese

Reviewed: Mar. 17, 2012
I love this simple and easy to make salad. The first time I made it, I followed the directions exactly except for the dill (didnt have any) and felt that the green olives made it too salty for my personal taste. Since then, I've switched to black olives, always use fresh parsley and omit the dill completely (personal preference). This is a simple but refreshing salad that you can definately make your own by adding different ingredients to customize to your liking or depending on what is in season. I eat this as a meal, but it would make a great side dish also. LOVE, LOVE, LOVE IT!

Mahi Mahi with Coconut Rice and Mango Salsa

Reviewed: Dec. 25, 2011
Followed recipe as written and felt it was almost too spicy (and I like spice!) that it took away from the Mahi Mahi flavor. That being said, I would make it again, but will cut back on some of the spice. Otherwise, I thought the marinade was great, and will actually consider using this same marinade on other meats. Used store bought mango salsa for convenience.

Chicken and Gnocchi Soup

Reviewed: Dec. 25, 2011
Made exactly as written and although I thought it was good, it didnt knock my socks off. Definately quick and easy with easy to find ingredients, which is always a plus. Will make again, but will make some adjustments for personal taste.

Fish Fillets Italiano

Reviewed: Dec. 22, 2010
Loved, Loved, Loved this! The only change I made was that I used Talapia because that's what I had on hand, but otherwise, didnt change a thing. I thought this was fantastic! I am always looking for was to make fish that dont involve it being breaded of fried. I will definately make this again but will try cod, haddock or mahi mahi, or shrimp next time. Thanks for a great recipe!

Super easy to make, and tastes great! What more could you want? Great peanut butter taste. Easy recipe to alter with your own favorites like chopped mini peanut butter cups, m & m's, chopped nuts, oreos etc can make great decorative toppings.

Potato Filling

Reviewed: Nov. 26, 2010
I grew up on this stuff. We only ever had it 2-3 times a year (Easter, Thanksgiving and Christmas) and so it is something I never get tired of. For what its worth, here is my two cents... Saute your onions and celery until they are brown but not burnt. (they browner, the better tasting your filling will be). We only ever added 1-2 slices or bread and I have used both white and wheat bread and it turns out great regardless. The amount of bread is determined by how much butter you used to sweat your onions and celery. You want the veggies to be moist but not swimming in the butter when you combine them with your mashed potatoes (since we always add butter when mashing. We want the filing to taste like onion and celery, not just regular mashed potatoes). Mom always cracked an egg into her filling when she was mixing it all together (to act as an additional binder) although I dont find it necessary. Put a few pats of butter on top before baking to give it a nice crispy golden brown crust. Ive also made this with instant potatoes (Oh,The Horror!) and it has turned out surprisingly good. Also, this can be made a day or so ahead of time so the flavors meld. Obviously, adjust the amount of onion and celery based on the amount of potatoes and your particular taste. Brings back good memories...this is stick to your ribs Pa Dutch cooking at its best.

Veggie Lasagna Florentine

Reviewed: Nov. 13, 2010
I made this recipe once a few years ago and absolutely loved it. I thought I had lost the recipe but found it today folded in an old cookbook so I immediately logged on to add it to my favorites so it never can get lost again, and to leave a much derserved 5 star rating! I recall making a few substitutions as suggested by others: I doubled everything except for the sauce, used zucchini, yellow squash, broccoli, spinach, onion and mushrooms as the veggies and doubled the mozzarella (hey, I LOVE CHEESE!) and ricotta and added some red pepper flakes for some heat. I substituted the oregano with dried italian seasoning and I also did not bother pre-boiling the noodles - there is no reason! There is plenty of moisture with this amount of sauce to cook the noodles. For those of you that have wondered - it freezes well. I had plenty left over and cut into individual servings, wrapped in foil and froze with excellent results. I am so happy I found this recipe again! Fantastic recipe - even for meat lovers!

Feta and Sun-Dried Tomato Stuffed Chicken

Reviewed: Nov. 8, 2010
I love, love, love this recipe! Omitted the dill and parsley - but only because I didnt have any on hand. Already made this twice, and plan on making it again for dinner tomorrow. Love the fact that I can eat it cold or warm. 1st time I made it with green olives and felt it was a bit too salty withe the feta. 2nd time, I made it with sliced black olives and thought it was better. Cheap and inexpensive recipe that is easy to customize to your own tastes. I will make over and over again!

Paul's Pumpkin Bars

Reviewed: Nov. 8, 2010
The only reason this didnt get 5 star was because I didnt think it had enough pumpkin or cinnamon taste. Super moist cake though. Will make again but will add more cinnamon or pumpkin pie spice. Also, thought it made way too much icing and the sweetness of the icing may have been why I didnt think it had enough of a pumpkin taste. Will cut the icing recipe in half next time also. Otherwise, a great recipe. Thanks for sharing!

Six Can Chicken Tortilla Soup

Reviewed: Nov. 8, 2010
Followed the recipe as written but served with a dollop of sour cream, some shredded mexican cheese and tortilla strips. Great, quick, cheap and easy. Will definately make again but will most likely sub the canned chicken for rotisserie chicken. Thanks for a great recipe!

Mushroom Blue Cheese Turkey Burgers

Reviewed: Sep. 13, 2010
These were very good, but I made some changes after reading other reviews. I didnt add soy sauce, because the blue cheese is salty enough for my taste, but I replaced it with worcestershire. I also added about 1/3 cup of bread crumbs because of other reviewers comments about them falling apart. They turned out great, very moist and definately tasty. Next time I think I will saute the onions and mushrooms before adding them to the turkey burger and will probably make it into a meatloaf instead of burgers. Will definately make again and am forwarding this recipe to a friend who is always looking for something different.

Creamy Chipotle Chicken

Reviewed: Aug. 24, 2010
This was a great, quick, easy and tasty recipe. Followed directions as posted and had excellent results. My chicken was done in 4 hours on low, so make sure you watch your chicken. It might have something to do with the size of your crockpot. I have one of the larger oval ones so my chicken breast laid flat with little to no overlap. If you have a smaller pot, you might have overlap which might call for the longer cooking time. In any case, if your looking for something differnt, try this. I will definately make again.

Unbelievable Chicken

Reviewed: Jul. 23, 2010
I baked this in the oven with bone in, skin on breast and it turned out moist and flavorful - but not flavorful enough. I didnt have any lemon so I added more lime juice and I substituded coarse-ground mustard for spicy brown mustard because that is what I had on hand. I dont know that my substitutions would make that much of a difference in the taste. As good as it was, it didnt knock my socks off. That being said, I would probably make again.

Birthday Bones

Reviewed: Jul. 14, 2010
This is perhaps the easiest dog treat recipe Ive tried. I did follow another reviewers suggestion and turned the oven off, leaving the treats inside the oven while it cooled and for about 3 hours additional. Sent them up to a friend in PA and she said her dogs love them! Thanks for the recipe!

Slow Cooker Cassoulet

Reviewed: Apr. 20, 2010
This was just okay in my book. After reading the reviews before making this, I followed the advice of some of the other reviewers and omitted the salt completely but still felt it was too salty (due to the keilbasa). One other change I made was that I put my boneless, skinless chicken breast halves in whole - which kept them moist and juicy. When they were done, I was able to just break up the breasts into bite sized chunks with a fork. Also - I subbed the dry wine for chicken broth because its what I had on hand. I would probably make this again someday, but will probably omit the kielbasa completely or sub it with meat all toghether. All in all, not bad - but not great either.

Spinach Tomato Tortellini

Reviewed: Sep. 9, 2009
If I could give this 6 stars I would! This was a wonderfully easy and tasty recipe that I plan on making over and over. I made this exactly as stated without any changes or additions however, next time I might add some grilled chicken or shrimp and maybe a little red pepper flakes for a bit of kick - the options are endless. YUM!

Pizza Dough I

Reviewed: May 26, 2008
Great recipe! I have made this dough numerous times and have always been happy. Only thing I do that is not mentioned in the original recipe is - I let my dough rise. Very easy recipe to alter with additional herbs and spices for outstanding home made pizza!
