I don't understand how this recipe works, but it did indeed make the juiciest chicken I've ever had. When I cut into the breast meat, juices literally poured out like the chicken had been submerged in water. The only thing I did differently was add a little lemon pepper to the seasoning outside. I might experiment with other seasonings as well, like blackened/cajun spice, Greek seasoning, etc. This will definitely be the recipe I use for every roast chicken I prepare for the rest of my life.
