Chicken Breasts in a Sour Cream and Wine Sauce

I followed the recipe exactly except I browned the chicken in the bacon fat and served over noodles. It was very good and my husband liked it, I will likely make it again. I would, however, likely substitute shallots for the green onions as another reviewer suggested. The chicken was surprisingly tender, I was worried it would be overcooked. My husband enjoyed leftovers the next day but found some of the chicken to be too gamey when he ate leftovers the 2nd day.

Strawberry Spinach Salad I

I made this tonight with red onion and without the poppy and sesame seeds (I didnt have any), and the dinner group commented throughout the night about how good it was! I used 1/4 cup sugar and added sliced red onion to the salad, and just used baby spinach so there was no need to cut it. They asked me to bring this salad to every meal from now on, so I suppose it was hit!

Broiled Parmesan-Lemon Tilapia

This was a big hit! I used low-fat mayo and real butter, used dried lemon peel (available in the spice section) since I didn't have fresh lemons on hand, and forgot to add the basil but didn't miss it. I also made the homemade sazon seasoning another viewer recommended since I couldn't find it in the store. I broiled the fish for 2 minutes on each side before adding the crust but had to broil it 7 minutes (the last 2 on high broil) to get the crust to brown a bit, and the fish seemed a bit overcooked. Next time I would put the crust on after broiling on just one side for 2 minutes, and there will definitely be a next time! Very delicious and easy!

Warm Blue Cheese Dip with Garlic and Bacon

Wow...5 stars even with some substitutions. I whipped this up on a whim tonight so I took many short-cuts. I used low-fat cream cheese, non-fat half and half, and dried diced onions since I didn't have the proper ingredients on hand. I even re-heated some left over bacon and used the frozen cubes of crushed garlic, and this dip was amazing. Browning the garlic in the bacon fat gives this dip a really nice roasted flavor. I just ate it with wheat thins, but toasted bread would probably be even better. It actually tasted better when it was room temperature. Overall very easy too, I will definitely make this again!

Luau Chicken

Deee-licious! I followed LatinaCook's recommendation and coated the raw chicken with flour and a little salt (I used garlic salt) and pan fried it in a little olive oil. I definitely think that made a big difference! I minced green and red peppers, onions, and sweet potato and added it to the sauce before coating the chicken. Next time I would leave the onions sliced for a little texture/crunch. I also doubled the sauce, and it hardly covered the chicken even with the doubled sauce and veggies. I served over white rice but brown rice, quinoa, and pasta would work too. I will definitely make it again - hubbie and I both thought it was restaurant quality!

Curried Chicken and Brown Rice Casserole

I've made this once and it probably earned 4 stars but 'm rating this a 5 for the potential. I added about a cup of cauliflower which was a nice addition. I also added a can of tomato sauce. I think it needs 2 cubes of chicken bouillon and probably a tbsp of cumin. I will also add chopped onion next time. I started it in the skillet and just put the whole skillet in the oven covered in foil to finish it, so I didn't dirty 2 pans. Do stir it often. I almost didn't add the raisins since I don't usually like fruit mixed with savory dishes but I wish I had added more, they really do make it special!

Country Green Beans

Delicious! I also used finely chopped leftover bacon (about 4 slices for 2 pounds of green beans) and cooked them much longer than recommended (maybe 40 minutes?) so they got soft and absorbed the sauce. These taste EXACTLY like the Bird's Eye Green Beans and Spaetzel frozen dish but are obviously much better fresh!

Zippy Summer Shrimp

Pretty good, I will make it again but will cut the lemon juice in half. I realized after I served it that I forgot to add any salt, but the sour lemon taste was so overwhelming that it almost simulated the taste of salt... in balance it would be good but according to the recipe was too overwhelming (I used bottled lemon juice). Otherwise a nice, light, healthy meal. I recommend cooking other veggies with it and serving over brown rice or another starch. I definitely did not find it filling enough to eat about 10 large shirmp with a side of green beans...

Szechwan Shrimp

Meh... Way too sweet for my taste, but I like a more savory szechwan. My husband liked it, but he really enjoy sweet Chinese dishes. if I make it again, I'll use more of the savory ingredients and skip the honey. Maybe less ketchup, also...

Sugar Cookie Icing

I always use this icing for sugar cookies including cookie lollipops/bouquets, and it is perfect! I substitute butter extract or clear lemon extract for the almond. It tastes great and dries hard and shiny (sometimes I microwave it for about 10 seconds to make it extra shiny).

Sweet Potato, Carrot, Apple, and Red Lentil Soup

Very good for a healthier option. I used chicken broth (and less salt to compensate) but otherwise followed the recipe. I made this for my sister's birthday and everyone seemed to like it, although they didn't believe me that I hadn't added cream, milk, cream cheese, etc. to the soup. I did add the dollop of Greek yogurt which I think added a lot.

Chicken Breasts with Balsamic Vinegar and Garlic

Made this for Valentine's Day dinner - hubby and I loved it! I didn't add mushrooms as I don't like them (but may try them next time), but even without it, it was amazing! I didn't think the vinegar flavor was dominant at all. I used chicken breast tenderloins instead of whole breasts based on reviews about pounding them flat, etc. I think this worked great but you should cut back on the simmering in the sauce for 3-5 minutes. I served with roasted red potatoes as suggested, which was a nice complement. I will definitely make it again!

Guacamole

This was my first time making guacamole and this was perfect! I used canned petite diced tomatoes instead of fresh, and added a little cumin and jalapeno. It had none of the "musty" taste that I find with avocados/guac sometimes because it was so fresh, extremely creamy and almost buttery! Delicious!

Quiche Lorraine I

This was my first time making a quiche and it turned out perfect with some modifications based on the reviews! This was very easy and quick. The modifications I made - I used 2/3 cup heavy cream and 1/3 cup 1% milk instead of 2 cups light cream. I also added used about 2/3 cup swiss and 1/2 cup cheddar gruyere. I used dried minced onions instead of fresh, which worked very well. I also used 1 tblsp of ranch dressing powder instead of the salt. I can't wait to make it again!

Tangy Sirloin Strips

I'm not sure why this is so delicious, but it really is! I bought "last chance" sirloin 2 days ago that was already looking a little pekid. Late last night I remembered it and went looking frantically for a recipe that uses sirloin, and found this one. I prepared the meat and marinade, thinking "so what" when I read the list of ingredients. Tonight I was eating with my whole family at my sister's house (about 10 people) and brought this knowing it had to be cooked. I prepared as directed but took a short-cut and just used bottled Espresso Red Wine Steak Sauce instead of the glaze at the end. It was crazy delicious but I might add the molasses next time. Everyone raved about how good it was, and my sister even ate a few pieces although she usually doesn't eat red meat or pork at all. The steak was cooked med-well and I usually like med-rare, but it was still amazing. I cut the sirloin into about 1.5x4 or 5 inch strips, and might make them thicker next time to compensate for cooking time of the bacon (and/or pre-cook the bacon a bit as others advised). Also the toothpicks burned away where exposed so we accidentally ended up chewing some. Not sure how to remedy that, perhaps put it on metal skewers instead... I can imagine doing some more tweaking to perfect it, but this is a sure-to-please keeper! I can't wait to make it again!

Oatmeal Peanut Butter Cookies

Goodness...gracious.... I will have to make these at least a few times a year from now on, especially in the fall. I don't mean to be the person who rates it after making a ton of changes, but this really worked for me, so... I used a bit more oats (1 and 1/4 or 1/3 cup) and might use 1 and 1/2 next time. I also used reduced fat crunchy Jif peanut butter because that is what I had, but it turned out great. I don't use margarine so I used butter. I also added a tblsp of vanilla as others suggested. I wasn't sure about using the shortening since I usually don't, but I'm glad I did. I added milk chocolate chips and mini Reese's candy - yum...I definitely think using a mini candy like Reese's or M&Ms adds something. I made some with just milk chocolate but they weren't as good. I would try some with white chocolate chips next time as well. Thanks for this amazing recipe, it's a keeper!!!

Barbecue Lasagna

WOW!!! I was looking for something creative to do with slow cooked pork BBQ leftovers (I added Bull's Eye since the meat wasn't too saucy) and this couldn't have been more perfect! I followed the recipe ingredients exactly but was pretty absent-minded/lazy about following the dirsctions (got the layers out of order, didn't spread things evenly, put the cheese on top in the beginning instead of the last 5 minutes) but it turned out amazing! My husband and I were blown away. This would be perfect to take over to someone's house to be re-heated if you wanted to drop off dinner or for a pot-luck, tailgate, etc. where it could sit out a while. It was fairly quick to make, and you could probably use any kind of slow cooked meat. Imagine the possibilities...leftover pot roast and mashed potatoes, BBQ chicken, mexican beef, etc. Delicious and creative, I'll certainly be adding this recipe to my regular rotation!

Cucumber Sandwiches III

I've made these several times (I usually use ranch powder instead of Italian) and they are always a hit with men, women, and children alike! I slice and toast potato hot dog rolls which are a good size.
