Chai Tea Mix

Just finished making this and having my first cup. I mixed 1 tablespoon of vanilla with 1 1/2 cups sugar the night before and let it sit all night. I added some nutmeg to the mix (I'm not sure how much because I was playing with a new spice grinder and it was mixed in with the cardamom) and some star anise. I forgot to get some white pepper so I did add a little black pepper. I did NOT use the vanilla flavored creamer. I prefer making this with some hot milk instead of just water. I think it is still plenty sweet with the cutting the sugar. Will definitely enjoy it this winter!

Pumpkin Spice Cake with Cinnamon Cream Cheese Frosting

I made this for a church potluck today. It was yummy and easy even with a cake mix without pudding! I didn't have time to make an icing so I'm sure it would have been even better!

Gingery Carrot Salad

I made this for a church potluck. I did double the recipe with honey instead of artificial sweetener and didn't include raisins because I didn't have ay. Almost all of it was eaten and some people did come back for seconds. I think next time, I will leave out the cinnamon. Other than that, it's definitely a different flavor that I'll try again.

Hummus III

Yummy! As people's diets around us are more diverse, hummus wins for just about everyone! It's vegan, gluten free and sugar free! Serve it with vegetable sticks and it's a winner! I peel my chickpeas, yes this is laborious, to make the hummus smoother. I personally add cumin to the mix. Enjoy! We will be enjoying as our appetizer for Thanksgiving today.

Vegetarian Four Cheese Lasagna

This was very yummy and gets 5 stars for the taste! The prep time is WAY off which I knew from other reviews. I spent at least 75 minutes in prep and a lot of work and that's why only 4 stars. I had pumpkin, tomatoes and eggplant from the garden and pesto from basil in the garden. I did salt the eggplant and let it sit for close to 30 minutes before frying it which was not in the directions. This recipe will definitely be a special occassion recipe in our house, but not a staple because of the work required but I may roast some extra pumpkin for the freezer!

Chickpea Cauliflower Curry

We all enjoyed this recipe. Only a 4 because I did make modifications. I added another can of tomatoes because there wasn't much sauce. I also added Garam Masala (probably 2t) and cumin (1 1/2t) and not cloves.

Amy's Cilantro Cream Sauce

Veggie Pot Pie

Yummy! I realized that I didn't have any white potatoes so I used sweet potatoes instead. I used an extra tablespoon of cornstarch as other expected. This will make it into our families normal rotation!

Picnic Baked Beans

Yummy! I took these to a bonfire and they were a hit! I soaked the beans overnight and then used a pressure cooker to cook them. I found that I didn't use any more of the cooking liquid while they were baking - but could have used just a little bit though. I bought another bag of navy beans already for the next batch! (Oh, I didn't add bacon either.)

Vegetarian Tortilla Stew

Very yummy and super easy. I didn't do the chicken substitute and made my own beans (another recipe from the site) the second time around. We added some sour cream and cheese on top. This definitely has made it into the family cookbook and will be made over and over again.

Terry's Texas Pinto Beans

Yummy - I wanted to make some beans for Vegetarian Tortilla Stew on this site and trying to do more from scratch. These turned out great as a basic recipe. I didn't do the hot stuff because my kids aren't huge fans of spice yet. We will definitely make these again and make re-fried beans out of them. I went ahead and made two pounds worth so I'm freezing them to use later.
