Chorizo and Lentil Stew

Reviewed: Apr. 24, 2008
This stew is fabulous! The flavors are complimentary, and not overpowering. My local store did not have bulk chorizo, so I used a 1 lb. package of chorizo links, removed the casings, browned and sliced 'em. I may actually use 1.5 lbs. next time, just to have a little more meat. I also used chicken broth instead of water, which made the stew almost too salty, so reduced sodium broth is probably the way to go. My BF was a little turned off by the lentils, so I may even try a different bean next time, just to change it up a little (an 8 or 16 bean blend would probably be nice). All in all, a fantastic recipe that will definitely be at the top of my soup list. UPDATE: I made this again, doubled the chorizo, and used a 13 bean blend in place of just lentils. Love it, love it, love it!

Brooke's Best Bombshell Brownies

Reviewed: Apr. 21, 2008
I never thought that I would be able to make delicious brownies from scratch, but thanks to Brooke, I have! These are fantastic! Moist, fudge-y, dense ... you just can't ask for anything more from a brownie. I did not use the chocolate chips (personal preference), and I can't wait to try them with walnuts! It's "bye, bye" to the boxed stuff! This is now my go-to brownie recipe. Fabulous! UPDATE: I made them again with walnuts ... Fantastic! Love 'em!!

Lemon Poppy Seed Loaf

Reviewed: Apr. 21, 2008
Moist and lemon-y ... exactly what I was looking for! I wanted a distinct lemon flavor, so after reading other reviews, I used the zest of 3 large lemons, along with their juice (equalling almost 1 cup of lemon juice). I also dusted the bottom of my pans with white sugar, so that they would have a sweet crust. My loaves were perfectly done in 40 minutes, so you might want to keep an eye on them towards the end of baking. A fantastic recipe! Thank you, thank you!

Buttermilk Pound Cake II

Reviewed: Apr. 21, 2008
Man, do I love pound cake! This was fantastic!! Ate it plain, ate it with berries, ate it with ice cream ... it was great with everything! Used fresh lemon juice because I didn't have any extract, and I dusted the bottom of my bundt pan with sugar to get a crusty top. Definitely recommended.

Apple Pie by Grandma Ople

Reviewed: Apr. 21, 2008
This was my first attempt at apple pie, and it was easy and delicious! Used McIntosh apples at the suggestion of the produce guy in the supermarket, and did not pour the sugar mixture over the crust, although next time I definitely will .. I was just too afraid of spilling to try it the first time I was making it. Wonderful, wonderful pie!

Cheesy Garlic Bread

Wonderful garlic bread! Used butter, and gently boiled it with the minced garlic prior to spreading it on the bread. Used shredded mozzarella cheese on top. Yum!!

Jimmbo's Garlic Knots

Reviewed: Apr. 18, 2008
These are delicious! I used butter instead of oil (personal preference), and gently boiled minced garlic in the butter for a few minutes. I brushed the knots with the butter/garlic prior to baking, baked for the designated time, brushed them with the butter/garlic again after taking them out of the oven, then sprinkled a little garlic salt and peccorino-romano cheese on top. Fabulous! I will never order these at a pizza joint again!

Cheesy Potato Salad

Reviewed: Apr. 18, 2008
Wonderful potato salad! Very flavorful. I added more bacon (couldn't resist!). When you want a potato salad that's a little different, this is the way to go. Makes a nice change from the same old, same old.

I'm not a big fan of cole slaw, but this was great! Makes a sweet, not tart, cole slaw.

Pork Chops with Tangy Honey Sauce

Reviewed: Apr. 18, 2008
This is fantastic! I marinate 2 pork chops overnight, then grill them. I boil the marinade for 3 minutes, so that I can use it to baste the chops while they are on the grill. One suggestion: if you are going to make more than 3 or 4 chops, double the recipe. I have used this as a marinade several times... it makes a wonderful pork chop!

Downeast Maine Pumpkin Bread

Reviewed: Mar. 27, 2008
This was my first attempt at pumpkin bread, and I love this recipe! The combination and measurements of the spices are perfect. I did use the 1/2 oil and 1/2 applesauce suggestion, and used 2 (8x4) pans, instead of the 3 (7x3). Also, when I make breads, I always dust the bottom of the pans with a little white sugar, brown sugar, and cinnamon mix ... just to give a little extra flavor to the "boring" bottom part. I brought the extra loaf to a neighbor, and they finished it in one day.

Diane's Colcannon

Reviewed: Mar. 24, 2008
I had never tasted this dish, so I didn't know what to expect, but it was absolutely amazing! I doubled the bacon, and used 1 cup sour cream in place of the milk (which is how I make mashed potatoes), but other than that, made the recipe exactly as stated. I don't think I will ever be able to eat regular mashed potatoes again! Thank you, Diane!

Slow Cooker Ham

Reviewed: Mar. 24, 2008
This ham was fantastic! Had to modify the recipe a little bit, because I was only cooking for two. Used a 2 lb. smoked, boneless shoulder butt ham, a 1/2 cup brown sugar, and cooked for approximately 4 hours on low. About 2 hours into the cooking time, I was worried that the sugar would start to stick to the crock pot and burn, so I also added a 1/2 cup of applesauce to the melting brown sugar, and during the last hour of cooking, brushed the ham frequently with the brown sugar and applesauce mixture. Was soooo incredibly tasty! I will be making this often.

Sam's Famous Carrot Cake

Reviewed: Feb. 27, 2008
If I could fill a bathtub with this cake and roll around in it, I would! It was so incredibly good! Substituted an extra cup of carrot in place of the coconut, and used two cake pans in place of the bundt pan. Used the Cream Cheese Frosting II recipe from this site for icing. Very, extremely highly recommended!

Creamiest Rice Pudding

Reviewed: Feb. 26, 2008
This rice pudding is soooo good! The flavors remind me of childhood. As other members have reviewed, the pudding does not get thicker once cooking is done, so make sure it is as thick as you like before you remove it from heat.

Italian Wedding Soup I

Reviewed: Feb. 26, 2008
I love soup, and after making my own, I will never be able to eat the stuff from a can again! This soup was excellent! Based upon other reviews, I doubled the meat so I'd have a lot of meatballs, and added extra broth. I tried browning the meatballs before tossing them in with everything else, but may not do that next time (just to compare). I never measure veggies that I cut up for soup, and probably ended up with more than the recipe called for. Really didn't change much: some garlic and onion powder in the meatball mix, and a little sea salt and fresh ground pepper added to the broth. I have already made this twice, and plan on making it frequently in the future!

Mom's Zucchini Bread

Reviewed: Oct. 1, 2007
They say that mom's know best, and Mom's Zucchini Bread is the absolute best! So moist and tasty. The first and last zucchini bread recipe I will ever need. I have made this recipe several times, and it disappears almost instantly! I took the advice of other reviewers and made the following changes: 1 1/2 cups white sugar, 1/2 cup brown sugar, 2 heaping cups of zucchini, and added 1 tsp. of nutmeg. The best zucchini bread ever!

Janet's Rich Banana Bread

Reviewed: Oct. 1, 2007
This was my first attempt at baking a banana nut bread, and it was so easy and delicious! Because the bananas are sliced and not mushed into the batter, the bread comes out of the oven a golden brown on the outside and a beautiful shade of yellow on the inside! It is so moist and delicious that my boyfriend wouldn't even let me have a bite of his piece! I added an extra banana, and may even add a little more than that next time. Absolutely delicious. Can't wait to have another slice!

Auto Parts Chicken

Reviewed: Sep. 28, 2007
I made this with turkey kielbasa, and it was awesome! Used white wine in place of the water, 1/2 cup extra chicken broth, 1 1/2 tsp. of herbs de provence, and a whole bay leaf instead of crushed. I can't wait to try this with other meats!

Four Cheese Margherita Pizza

Reviewed: Aug. 28, 2007
This was my first attempt at making pizza at home, and this recipe was just fabulous! I had never used Fontina cheese before, and it was excellent. This pizza was incredible, and I didn't change a thing. Even my boyfriend, who is really picky about pizza, said this one is a keeper!
