Easy Red Beans and Rice

Good base recipe. I added basil, cumin, celery seed, and Cajun seasoning in addition to the oregano. I also used diced tomatoes & jalapeños. My husband, who doesn't much care for red beans & rice, said it was the best he'd ever had.

Enchilada Casserole II

Yeesh. I thought I'd avoid the overly tomato-y taste by omitting the tomato paste. I also used black beans in exchange for the ground beef. Still, found this dish to taste as good as it looked...and it did not look appetizing coming out of the oven. It was not the worst tasting thing I've had but I will not make this again.

Southwestern Egg Rolls

Amazingly yum. I baked instead of frying & increased the filling ingredients (which I could have eaten by itself with a spoon) to make 8 total rolls. Looking forward to leftovers for lunch today!

Hearty Tuna Casserole

Not bad at all! I used only a tablespoon of mayo and about 3 tablespoons of sour cream (that was all I had on hand) and it was still great. Not dry at all- like many are complaining about. The veggies are a great accent. Add a dash of crushed red pepper flakes before serving for a little added heat.

Unbelievable Spinach Calzones

With a few minor changes this recipe is AWESOME. I used canned pizza dough, cut the cheeses way down & added more veggies (bell pepper, mushroom, onion) and spices to the mix. Very hearty & yummy.

Cajun Chicken Pasta

This tasted divine! Instead of butter, I used olive oil & also squeezed the juice from a lemon instead of using lemon pepper seasoning. Loved the light creamy lemon flavor. It's a nice cool down from the cajun-coated chicken.

Tara's Sweet and Chunky Chicken Salad

This is very yummy, though I used halved red grapes instead of the cranberries as it was what I had on hand & diced chicken pieces in place of the canned because I don't like canned meat. I also added chopped celery for extra crunch and a light sprinkle of garlic powder. The filling was delicious stuffed in a pita.

Tomato-Cream Sauce for Pasta

My husband likes white sauce, I prefer red. This is a perfect sauce for both of us to enjoy. I like to add sauteed mushrooms & green peppers and serve over spinach fettuccine. This recipe is a regular.

Roasted Red Pepper Cream Sauce

Very good. I left out the butter, used jarred peppers, & didn't puree. There was great flavor. Next time I'm going to add sautéed onions, mushrooms, and perhaps artichoke hearts to give it a more chunky, veggie taste. Served over rotini twirls.

Roasted Asparagus and Mushrooms

Brilliant! I made this for Thanksgiving with the relatives, then the next night for Thanksgiving with friends. The 2nd time I threw some fresh broccoli into the mix. A very simple, delicious dish.

A very filling filling. I even forgot the brown sugar & it was still yummy. This mix could also work great as a tasty side item or chip dip. Yummy sprinkled with cilantro!

Baked Chicken and Zucchini

Really hearty and delightful! I added sauteed portabello mushroom, garlic, & sliced onion in between the tomato and chicken layers. Had to cook in the oven for roughly 45 minutes...but I think that was because my breasts were big. (In food terms, not in my own body terms...sadly.)

Easy Garlic Broiled Chicken

There has never been a more succulent and tender chicken as this. We didn't even need a knife to cut it! The basting sauce was light and airy with a perfect balance. I, too, baked 375 for 50 minutes but will totally try broiling next time.
