Oven Fried Chicken II

Hot dang this was tasty! Crisp, but still light. I did everything according to the recipe except cooked the chicken on a broiler rack to keep the bottom as crunchy as the top.

Black Bean Soft Tacos

This was delicious! I added way more spices, hot sauce, used green onions and fresh garlic, and finished it off with lime juice and fresh cilantro. This would also make a delicious burrito filler or nacho topper. It'd probably also be great on top of rice.

Salmon Fillets with Creamy Dill

Pretty good but next time I think I'd rather have the sauce be cool and work as a refined tarter for dipping instead of cooking it on top of the fish. Substituted fat free Greek yogurt for the mayo.

Kielbasa Cabbage Skillet

Whoa, this was yummy. Used turkey keilbasa & browned it before adding it to the veggies. Extra seasoning included garlic, garlic powder, red pepper flakes, and a dash of Worcestershire sauce. Sour cream garnish added a creamy touch.

Italian Spaghetti Sauce with Meatballs

Really really good. I changed a few things like used Ritz crackers in lieu of the bread crumbs, ground chicken (baked 20 mins @350 before adding to sauce), and added sauteed onion/celery/bell pepper/mushrooms to the sauce to make it more chunky and healthy. I also forgot to add the tomato paste. Still delicious & will eat the leftovers on a meatball sub for lunch today! Nomnom.

Thai Chicken Curry in Coconut Milk

Not bad but missing something extra...maybe fresh ginger? I cooked the thinly sliced chicken in the paste & minced garlic mix until it was done. Removed the meat & added the veggies. Used soy in place of the fish sauce & added basil. The fresh cilantro helped give the dish a fresh zip- don't skip on it!

Seasoned Turkey Burgers

You have to like onion flavor because these burgers are packed with it. I enjoyed them but used 3/4 of a packet of soup & Worcester sauce in place of the soy. Put the patties on a hot greased skillet for 4 minutes, flipped, cooked 2 minutes, then covered the pan 4 minutes longer. Juicy, packed with flavor, & delicious.

Flavorful Beef Stir-Fry

Very good! It's a nice clean versatile recipe. Garlic & crushed red pepper was added and I used a different mix of veggies (brocc, onion, red pepper, celery, water chestnuts). Totally double the sauce and reserve half for when you take the veggies off the stove to set aside. Next time, I wanna add fresh ginger.

Creamy Au Gratin Potatoes

This gave me multiple mouth orgasms. Man. The time it takes to bake is well worth it. Added salt & pepper & garlic powder for spices on the potatoes. The cheese sauce was a mix of sour cream & milk, heated up until blended, add cornstarch to thicken, then add cheese. SOOO GOOD. I'm gonna go have seconds now.
