Lemon Chicken with Broccoli

Perfection. I subbed asparagus for the broc & added lemon zest. Then used cornstarch to thicken the sauce. My mouth was happy!

Slow Cooker Pot Roast

Amazing. Huge hit with my belly. I added a little cornstarch to the gravy to thicken it, but kept all the remaining ingredients as is. Can't wait to make this for a holiday family dinner.

Chicken Breasts with Balsamic Vinegar and Garlic

Amazing! Very juicy, tender flavorful chicken. I left out the mushrooms & added onion. At the end, with the butter, I did a drizzle of heavy cream. Will make this again!

Delicious, fast, and spicy with added Old Bay seasoning. I also left out the beans and added more onion, bell pepper, & potatoes. The fresh spinach added was amazing!

Creamy Vegan Corn Chowder

Not bad with added potato, potato flakes (to thicken), fresh chopped jalapeno, cayenne, worchestire sauce, and extra garlic & corn. I also blended the soup slightly.

Gary's Turkey Burritos

These were ok. I left out the beans & added burrito seasoning, cumin, and chili powder. Toppings were cilantro and sliced avocado. Nothing out of this world, but a healthy simple dinner to make on a busy weeknight. Although, I love the hot tomato sauce & plan on implementing that into many more dishes!

Just ok...and this is after adding sauteed onion, bell pepper, shrimp, basil/oregano/crushed red pepper. The sauce comes out nice and thick but there sees to be something missing...

Good base. I marinaded breasts for an hour in the sauce, then pan seared them. Next time I'll try it with rosemary and more lemon....perhaps even using zest.
