Sweet Potato Casserole II
OH MY GOODNESS! GRACIOUS! For many years, I had been using the canned yams with the wonderful marshmallow topping. Loved it. However, having become aware of the prevalence of GMOs in 80% of our food, I wanted to steer clear of the canned yams, since they are GMO. (Corn starch, sugar). I came here, hoping for a good basic sweet potato casserole recipe. When I read the ingredients, I KNEW I would love this. I used four small/medium sweet potatoes. I baked mine. I went exactly by the directions, using all the measurements as stated. I did use brown sugar in lieu of the regular sugar the recipe called for. I also added 1 heaping tablespoon of cinnamon and 1 teaspoon of Nutmeg. And let me tell you how WONDERFUL that butter streusel topping is! Yum, yum! I do not care for pecans, so I omitted them. I simply mixed the brown sugar with the flour. Then, I cut little cubes of my (solid) butter and tossed it together. I baked it for 40 minutes, because like someone else said, I too love a crunchy topping. This recipe is a keeper. It's worth the time to make and it's fun to make, too! Creamy Hot Cocoa
ABSOLUTELY DELICIOUS! I am sipping it, while I type this review! This has a wonderful, creamy flavor. I did REDUCE THE SUGAR and per other reviewers advice, used half a cup of sugar. Other that that, I followed the directions exactly as written, and did not change anything else. One thing I would recommend is DO NOT ADD THE CREAM TO THE BOTTOM OF THE MUG. When I poured the hot chocolate into the mug with the cream, it was not even lukewarm! That was due to the cream, being in the mug already! Add the cream AFTER you pour your hot chocolate, not before. In the directions where you add milk and then heat UNTIL HOT, I would HIGLY RECOMMEND at this point, BRINGING IT TO A GENTLE BOIL and immediately remove from heat. THEN, pour in your cream. FIVE STARS! Love this! Jeanie Bean, thank you so much for sharing this recipe! It's a keeper.

Oven-Roasted Asparagus
This was "OUT OF THIS WORLD" GOOD! I read some reviews and then I watched the video. I like watching those! LOL I went right by the recipe. The only thing I did a little different was, I just put all the asparagus in a big zip lock bag and then added the other ingredients (except the lemon juice). I shook the bag up real good and then baked it. Since I'm one of those people who like those brown edges and getting something just a little done, I baked this for 20 minutes. I did stir it around every 10 minutes or so. The result was a wonderful, light browning of the cheese and the garlic! IT WAS INCREDIBLE! After I took it out of the oven, I squirted some lemon juice on it. I like using a real lemon. What a wonderful topper, too! I will definitely be making this again! It was the BEST asparagus recipe I have ever had, in my life! I highly recommend this. I'd give it 10 stars, if I could. :-) A big thank you, to Swedishmilk, for sharing this recipe. I see why it has a 5 star rating!!!!
