Overnight Raisin Oatmeal Pancakes

This was delicious! I only let the oatmeal sit an hour, had no baking powder so I doubled the baking soda, and it was still yummy! I'm sure it's even better following the recipe.

Earthquake Cookies

These are spectacular. Perfect for us poor college students as they are cheap and simple. Used margarine instead of shortening. I had no powdered sugar but granulated sugar does the trick. I have now made these with chocolate fudge, devils food, red velvet (lovely color and taste!), lemon, and orange cake mixes and have yet to be disappointed!

Chocolate Mint Cheesecake

This cheesecake tasted fabulous! It did make a lot more than a 9 inch spring form pan can hold and since i didn't have a 10 inch I used a 8 inch disposable pan in addition to the 9 inch spring form and made two cheesecakes. As amazingly good as it was i don't think i would make it again. It has a LOT of calories and uses some pretty pricey ingredients, and takes a day and a half to make. It was nice to try once though.

Kevin's Teriyaki Chicken

This was fantastic! I cut the chicken into smaller pieces, cooked it a bit in a skillet then threw in a bag of Asian style frozen veggies and some leftover rice. Then I put some of the sauce on and some corn-starch to thicken. Delicious :)

Creamy Linguini for Two

Firstly, half a pound of pasta is more than two servings (thank goodness, since, as listed each serving is over a thousand calories). We got about 4 and a half servings out of it. Also, it made more sense to me to just cook the bacon in the same pasta pot right before making the sauce, worked well and added some flavor. As another reviewer said, used 2% milk and added a little flour, but I don't think the flour was really necessary as it would have been plenty thick. Also put in some sauteed mushroom and onion. Tasted great. Good versatile recipe, will certainly use again.

Butternut Squash Soup II

This was delicious! I followed recommendations of other reviewers, adding cinnamon, nutmeg, and crushed red pepper. I didn't have any sour cream so I added a bit of yogurt. It got rave reviews from the family.

Chocolate Covered Peppermint Patties

Wonderful. Tastes delicious and everyone i shared them with raved about them. I wrapped them up in little pieces of foil (like the real ones) and people couldn't believe i had made them! Make sure you have plenty of extra sugar though, it used a bit more than i thought it would and ended up having to use a bunch of splenda packets (I had put a little bit of milk in my mashed potatoes like i always do but i think it made it take a lot more sugar, so i suggest just using pure mashed potato). Oh, and if you dip the top and sides in the chocolate then freeze a minute or 2 you can dip the bottoms relatively mess free. That's about it. Great recipe thanks.

Molasses Sugar Cookies

Great cookie. I noticed there was a dispute between shortening (which aparently has an oily taste) and butter (which gives the wrong consistency). I decided to compromise and use a vegetable oil spread (margarine) which had the best of both worlds. Make sure your oven is totally preheated, my first batch came out super mushy and did not get the "crackled" look affect.

Best of Everything Veggie Burgers

These burgers were HUGE! I thought about halving the recipe and was sorry I didn't. I baked them and it took longer to cook than the directions said. They tasted pretty good, but more hassle than they were worth in my opinion.

Scones

I used this recipe and added 1/2 cup of chocolate chips to it. I did everything else just as directed, but the dough was way too sticky and thin, unlike most scone recipes I've tried. When I put them in the oven they rose, but they all spread out a lot. They still tasted ok, but the texture was very unscone-like. It might be good as a cake or cookie... or something, but not a scone.

Amazingly good, I must say. I used a baking sheet instead of a pan and it worked fine. I also had a ton of leftover butter so I think 1/2 cup butter would be plenty.

Ginger Snaps II

These cookies tasted great, but they turned out more cake-ish than snap-ish if you know what I mean. Being a poor college students who takes most of her ingredients from the cafeteria I did have to make a few adjustments, such as brown sugar instead of white sugar and molasses. I don't know if this accounted for the texture difference, but as I said, it tasted great.

Irish Chicken and Dumplings

This was basically a chicken pot pie with the biscuit mixed in. None-the-less, is was indeed tasty. It made much more than I expected though, i had to start removing some of the "chicken" part to make room for the dumplings, and even then couldn't fit it all. It fed my family of 3 for more than 2 meals.

Apple Butter Bars

I recently got a jar of cherry butter. I wanted to do something fun with it, and remembered doing this recipe with apple butter last fall (which was great). So I used it with the cherry butter, omitted the spices, and used fresh cut up cherries instead of raisins. It was phenomenal! Totally different flavor, but just as good :)

Apple Butter Pork Loin

Excellent! I halved the recipe and it worked out fine, just used a smaller pan and a bit less time in the oven. I also added a bit of allspice. I served it with wild rice and green beans. It was delicious :)

Penne with Chicken and Asparagus

I usually don't like asparagus but my family needs to eat healthier so I gave this recipe a try, and the asparagus was actually tolerable. Everything else in it was just great! I added a can of diced tomatoes and some sauteed mushrooms. It was delicious and colorful. Also, there's really no such thing as too much garlic with this; I added 3 cloves and it still could have used more in my opinion, but it was still good.
