Microwave Cake

Just made this at work, and WOW, were we surprised! I made the lemon cake pictured using Roxy's instructions. The ladies at work have decided this is our "rough night" go to. Can't wait to try other varieties.

Instant Hot Cocoa Mix

Made this for my mom, who is counting calories and carbs. I used fat free non-dairy creamer and non fat dry milk because that's what I had at home. I put it in a pretty jar for my mom, but had some left over which I used to make a mug for my husband and myself. It was creamy unlike regular instant hot cocoa made with water, but we found that we had to continuously mix it. It's a fair trade for this low calorie/low carb treat. UPDATE: Mixed up a hot mug of this and added a generous amount of whipped cream vodka--it was absolutely wonderful and lower in carbs and calories than most alcoholic beverages!

Brownie Mallow Bars

I received a recipe similar to this one while teaching. The mother of child who brought in this treat for his birthday, brought in a second batch for all the teachers and staff the following day with a copy of the recipe. I misplaced my recipe during a move, but found this. I use marshmallow fluff instead of miniature mallows and get requests for this recipe everytime I bring it in to share! It's a favorite at work and among my co-workers' families.

No Bake Cookies V

In college, my 5 roommates and I couldn't make enough of these! They're easy and we always seemed to have all of the ingredients on hand. Perfect for random get togethers with friends or late nights spent cramming.

A neighbor brought these to a street Holiday party, but wouldn't share her recipe. I used the ingredient search to find this recipe. After making them, I think this must be her recipe or close to it. The ladies at work can't get enough! It's also so yummy with white chocolate instead of semisweet!

Hot Pizza Dip by 3-A-Day™of Dairy

I made this for a friend who can't cook. He needed a quick snack for a Super Bowl party at work last year. I sliced a couple of baguettes, drizzled the slices with EVOO, sprinkled them with some Italian spices, and toasted them slightly. I omitted the onions and red peppers and added some pepperoni that I cooked slightly to render out some of that grease. I cut the pepperoni into smaller pieces so everyone would get some with every bite. He messaged me the following day requesting the recipe for some of his co-workers. He said it was the first dish gone and said he'd have to learn to make it for future events.

Starkey's Mashed Potato Pizza

I needed a last minute snack for a card party one night and this couldn't have been easier or tastier! I used a prepared pizza crust, a pack of 4-cheese instant mashed potatoes, a pack of crumbled bacon, and some shredded cheese. I whipped it together in about as much time as it took to prepare the instant mashed potatoes. It was a hit at the card party and even more so with my husband.

Chicken Enchiladas V

This has become a staple dinner at our house. We have my sister over and a few friends as this recipe (combined with some mexican rice, corn, or a salad) feeds a crowd. I followed a few recommendations of others and altered a few things on my own. 1. I use 2 cans of soup--usually whatever I have on hand (Healthy Request cream of mushroom or cream of chicken, or nacho cheese soup). 2. I use low carb, high fiber, whole wheat tortillas--just a personal preference. 3. I put a dollop of the soup mixture on the tortillas with the chicken before rolling them up, it keeps the chicken moist. 4. I make a double batch whenever I make these (they do take some time) and freeze 1 batch so I have it on hand for a quick meal.

Garlic Ranch Chicken

The flavors imparted by the dressing, garlic, and basil are really good, but my dressing sort of separated from my chicken during cooking. Visually it's wasn't the most appealing, but it tasted delicious.

Chicken and Sausage with Bowties

This is my go-to meal whenever I don't know what to make for dinner. I did make some of my own changes and I've noticed I continue to make changes-throwing in what I have and making due with what I'm out of. We only use sausage, my grocer carries sweet and hot Italian sausage in 1lb bulk packages. I roll it into small balls and cook it thoroughly before adding canned tomatoes. Sometimes they're crushed, other times diced, a few times just a can of sauce. Occassionally I'll find that I've purchased some diced tomatoes seasoned with basil and oregano or some other variety of spices. I alway skip the rosemary as we aren't fans, but I add an Italian spice blend, oregano, red pepper flakes, and sometimes onion. I always leave the garlic in after I saute it in the oil, we like the flavor and texture. This is definitely a recipe I've committed to memory.

Deep Fried Camembert with Raspberry Sauce

My husband loved this and I thought it was pretty good too. Luckily, I had 8 ounces of cheese as I burned the first several pieces--they cook so fast! The amount of seeds and bread crumbs was still more than enough, even for 8 ounces. I popped my cheese in the freezer after coating it for about 30 minutes as advised by other reviewers and had no problem with cheese escaping.

Pork Chops and Cheesy Scalloped Potatoes

My husband doesn't like pork chops so I made this dish with 4 boneless chicken breasts. I wasn't wild about this dish, but will probably make it again as my husband enjoyed it very much. I wish I would have had measurements for the salt and pepper-I feel I was a bit heavy handed. My chicken sort of fell apart. My onions seemed to just melt away and my skins separated from my potatoes.

Aloha Quick Bread

I was so tired of using my ripe bananas to make plain old banana bread! This recipe saved me and was so delicious. Even my husband, who isn't crazy about fruit thought this was wonderful-he ate it for breakfast a couple days. My dad said it was like a Hawaiian Blizzard from Dairy Queen (his favorite kind) in bread form. I love the almond extract in this recipe, such a yummy addition!

Samoan Panikeke

Not what I expected. I followed the recipe, usuing 2 large very ripe bananas, but all I wound up with were balls of grease-saturated dough with only a slight banana flavor. I was so disappointed. I stopped after frying half of the batter and dumped it in my waffle iron. The outcome was still pretty flavorless, but a lot less greasy.

Candy Bar Popcorn

Yum! Wish I had more than what this made! I think if you chill the candy bar first, then use a grater, you might be able to more evenly distribute the candy over the popcorn.

OREO Mini PHILLY Cheesecakes

Took these to work and to Friends' Thanksgiving (when we feast with our closest friends) and everyone raved about them! Oreo cookies make a delicious and creative base (not a boring Nilla wafer) and while the cheesecakes sunk quite a bit, I just spooned some Cool Whip on top and sprinkled with crushed Oreo cookies. Pretty and tasty without over-indulging!

Touchdown Chili

My husband and I do not like chili (neither of us eat beans, he's not big on spice, and I don't care for a ton of tomatoes), but this was surprsingly wonderful! I subbed a 15oz can of pumpkin puree instead of tomato sauce which added some great flavor and thickend up the chili just a bit. I also used 1 lb of ground beef and 1 lb of pork sausage. I've started making batches just to freeze (in 1-2 serving portions). My husband loves having his new fall favorite at his fingertips and I love having a quick, filling, delicious dinner option.

Italian Dressing Mix

So nice to have this on hand--we use it to season our meats, mix in dips, or sprinkle on bread before baking. So much cheaper and I love using all these wonderful spices in place of artificial flavors.
