Microwave Corn on the Cob

Have never thought to microwave corn on the cob...but I'm a believer! Took another reviewer's suggestion and just put the entire cob--husk and all--into the microwave for 3 minutes, let it cool about 5 minutes, then pulled the husk and silk off in one fell swoop. Tasty and so much easier than my normal method!

Chicken Enchiladas I

My family gobbled these up. Made a few changes, based on other reviewers' comments--and it was delicious. First, I poached chicken breasts in chicken broth, tomato sauce, chicken seasoning, minced garlic, and cumin, shredded it, and put it back in the liquid. Then, I took a few spoonfuls of the liquid out (to reduce watery texture) and added the onion, sour cream and cheese. I followed the rest of the recipe as indicated, rolling and topping the enchiladas and baking them. Really yummy. Next time, I would roll half for the kids, then add a pinch of cayenne and roll the other half for the adults. Thanks for the recipe!

Brooke's Best Bombshell Brownies

I actually only had 1/2 c of cocoa powder on hand and went with it...and they were still delicious--kind of a lighter chocolate flavor, with a fudgy texture. Great recipe! I could see changing up the semisweet chips with chopped chocolate mint candies for the holidays.

Truck-Stop Buttermilk Pancakes

Restaurant-style pancakes, crispy on the edges with a soft, flavorful center. I have used another allrecipes recipe for years, and just tried this one to use up some buttermilk. Even better! This will be my "go-to" recipe when I have a makes a LOT of pancakes!

BLT Pasta Salad

Very tasty and so easy! Dressed it up a bit by adding green onion and celery, and used sliced grape tomatoes for sweetness. Yum!

Papa Felico's Garlic Sausage Bread

Delicious! Used a wide Vienna bread loaf, sliced down the middle. Made two versions--per the recipe for my hubby and me, and with bacon and no olives for the kids. Yum! The balsamic dressing really made it something special.

Easy Crab Dip

This turned out sloppier than anticipated and the taste was a little bland. Next time, I would add more hot pepper sauce to kick it up and less cocktail sauce so that it's not quite so runny.

Big Soft Ginger Cookies

I've been making this recipe at holiday time for the past two years--always with rave reviews. They are delicious and stay moist for a few days. I usually bake them as much as a month ahead of the holidays and freeze them, first wrapping them in press-and-seal wrap, then putting them in a freezer bag. Let them defrost on your counter and they taste like they did the first day!

Peanut Butter Cookies with Chocolate Chunks

Delicious and moist! I used a little more peanut butter and more chocolate chunks, baked for 10-1/2 minutes, and made sure they were pretty flat before I put them in the oven (they don't spread much). I didn't have time to refrigerate them, which is probably why the shorter bake time worked. Talk about a yummy cookie! Thanks!
