Barbecued Beef

I made 50 lbs of this recipe for a school fundraising function (for sandwiches) and it was WONDERFUL!!! The longer you cook it on the lowest heat, the better! I cooked it for 24 hrs on 250 degrees. Thanks!

Oyster and Cornbread Dressing

The other reviewers said they were hesitant but that it came out wonderufl. I found it to be WAY TOO FISHY - even with half the amount of oysters! I couldn't eat it. :(

SOOOO GOOD! I added carrots as well and used bacon instead of ham. Also used the bacon grease to saute the vegetables first.

Eggplant Rollatini

This recipe was SO GOOD! I didn't know what proscuitto was (I thought it was a cheese) so I used swiss inside the eggplant and it was great! I will try the meat slices next time though!

This is an AWESOME recipe! I couldn't believe that I made it at home and it didn't come from a restaurant! The only change I made is that I added some chopped onion and mushrooms while sauteing the broccoli - DELICIOUS!!!!!
