Cheesy Catfish

I didn't have catfish so I used Ocean Perch. Delicious--and my wife loved it. I'll make it again.

Parmesan Brussels Sprouts

I just got some brussels sprouts at a farmer's market and tried this recipe out. It was delicious. My brussels sprouts were small so I didn't cook them for as long as the directions said--just long enough to brown them a bit. The garlic I used was also very fresh. I will make this again soon.

Apricot Baked Ham

This is the best ham I ever made. I substituted Saucy Suzan Peach Apricot sauce for the Apricot preserves. I mixed the brown sugar and mustard with the sauce before putting it on the ham (and warmed the sauce in the micro for a minute on reheat before mixing it). I didn't have cloves, but still did diagonal scoring to aid the glaze penetrating the ham. I put water under the rack in the baking pan--and would have added some apple juice if I'd had any. I tented the ham with foil. And I brushed on a second glaze with about 15 minutes left. In short, I took several of the tips from others who've used this recipe and the results were fantastic.

Tuna Noodle Casserole II

Excellent! I used cheddar instead of american cheese, and egg noodles instead of pasta shells. Another hit from Allrecipes.

The Best Chicken Salad Ever

I used miracle whip, left out the onions, added halved red grapes and chopped bread and butter pickles. The result was a hit with everyone who tried it.

Shrimp Fried Rice II

I added some snow peas from my garden, used olive oil instead of sesame oil, only used 1 tbsp of soy sauce and no salt. I also used fresh sprouted mung beans which I threw in at step 3 as others have mentioned. I cooked the rice the night before so it was refrigerated and therefore non-sticky. I always do that for fried rice. I also doubled the amount of shrimp and added two minced garlic cloves. Even my finicky wife liked it -- mentioning only that I should have made more.
