Bean Burrito Casserole

Only giving 4 stars because I did not make exactly as recipe states. I do NOT like sour cream so instead I used a can of feista nacho cheese sauce mixed in with some salsa. It came out sooo good. They did not even taste like frozen burritos. Will definitely be making these again!!

Corn Dogs

WOW!! These came out GREAT!! followed the recipe exact except I left out the pepper. I did cook the dogs for about 5 minutes before though only because they are ball park and I was afraid they would "plump" when I fried them. I had no problem getting the batter to stick to the dogs. I just dried them off real well. I did put the batter in the fridge for about 30 minutes before I dipped and fried. They don't taste exactly like Fair dogs, but they sure do come close!! I thank you and my hubby and kids thank you for such a wonderful recipe!! :)

Refried Beans Without the Refry

OMGOSH!! these are YUMMY!! Tried this recipe once before and it was horrible (not sure what I did wrong) tried it again today and WOW!! Even my 7ry old who eats NOTHING, was eating a bowl full of this. I do NOT like Jalapenos OR Onions but as another reviewer had mentioned, they DISSOLVE when you mash them!! No need to pick them out even if you don't like them (I think taking them out they would lose flavor) I did use 3tsp salt as others suggested, but needed to add more after it was done. These are sooo good. I will be making these alot more often now!! Oh and I did not use a whole onion though (again, do NOT like onion) I think I only used maybe a 1/4 onion and still the flavor was great!!! so easy and so yummy!! If you don't like the flavor the 1st time, don't give up and adjust the seasonings to your preference... you will NOT be disappointed :) UPDATE: Used the water from the beans to make the Mexican Rice II from this site (had no chicken broth) and it was devine!! My kids devoured their rice/beans/cheese burritos!!

Over the Top Nachos

WOW.. these were great.. once you doctor them up a bit. LOL I added taco seasoning to the meat and made the nacho cheese sauce from this site to put on them. I baked the chips also. I mixed the meat and beans together to make it easier to put on the chips. Then I poured the cheese sauce over the meat and added some shredded cheese on top of that (we like cheese) My kids LOVED them. I put everything in a 9x13 baking dish and baked in the oven until the cheese melted. We actually had these for a "fun" dinner. There was ALOT of nachos. Will definitely be making this again!! :)

Crescent Dogs

I have tried to make these twice now and both times the tops come out nice and brown, but the dough that is touching the hot dog is NOT COOKED at all :( it is really doughy. My kids take the hot dog out of the crescent roll and eat it plain. Not sure what I am doing wrong as these are nice and easy to do.

Fruit Dip II

I am rating this 5 stars AS IS. I make this all the time for the kids and they LOVE IT. Unfortunately this time I took other reviewers advice and added liquid to it which made it WAY TOO runny. The kids had a hare time keeping the dip on the fruit with the juice I added :( Next time I will make the recipe as stated!!

Jalapeno Popper Spread

Not sure why some people are saying this is greasy, mine turned out GREAT!! It was not greasy at all.Hubby said it is 7 stars and my neighbor had to leave otherwise she would have eaten it all. LOL I cannot personally rate this because I do not like cream cheese, mayo or jalapenos :( I did use only mayo and used 4oz jalapenos (hubby likes it hot) although he said it was not really hot even using the extra jalapenos. I did mix the panko and fresh parmeson, then put on top and sprayed with PAM and baked in oven. I am definitely going to be making this again. Hubby and neighbor both said it tasted just like jalapeno poppers!! thank you for such an easy and yummy recipe!! :)

Tex-Mex Chicken and Rice Bake

My family loved this. Even my picky 5yr old!! It was sooo easy and quick to make also. Mix everything together in the same pan you cook it in. Less mess to clean up!! Followed the recipe exactly as written. Chicken came out nice and moist. Rice was perfect. Loved everything about this recipe. :) Not sure how people can rate this WHEN THEY CHANGE THE RECIPE!! It is good AS IS!! My kids are VERY picky and this is one recipe that they LOVE!! thanks for such a great recipe

Sue's Taco Salad

LOVED this!! Whole family loved it. I did use a can of chili instead of the kidney beans as that is what I had on hand. I also used fritos for the chips. I added the chips, tomato, lettuce to each bowl, then added the meat mixture so we could have leftovers without the chips getting soggy. (although we didn't, we at it all) LOL. Thank you for a recipe that my kids will actually eat!! :)

Brown Jug Soup

Hubby and I really liked this. My kids, not so much, thus the reason for the 4 stars. Was super easy though. Wish my kids would have liked it as I usually have all the ingredients on hand. Will make again, but scaled down a bit for me and hubby.

Heavenly Blueberry Smoothie

YUM!! I did not have soy milk so used 1% milk. Also had no honey so did not add it. It was still good without the honey. I did add a few fresh spinach leaves for an extra healty boost and you could not even taste them!! I also used fresh blueberries and kept my banana frozen. My kids thought it tasted like a milkshake :)

Slow Cooker Chicken and Dumplings

LOVE this recipe. So easy and so yummy. I did not use the biscuit dough for the dumplings though, I used the bisquick dumpling recipe. Everything came out so good. My kids even liked it. That right there makes it 5 stars in my book!! Thank you for such a quick and easy recipe.

Slow-Cooked Chili

LOVE this chili. My kids LOVE this Chili as does my hubby and the babysitter. lol. Only thing I did different was add 1lb ground beef and 1lb ground sausage as that is what we had on hand. I have made this twice now and it is soo easy and sooo good. Not too spicy. Also leaves it open for you to add other ingredients to your liking. Thank you for a great recipe!!

Slow Cooker Enchiladas

WOW... this was soooo good!! Even my picky 4 and 7ry old loved this!! I did as others said and doubled the tortillas, used 2lbs meat and put in some black beans. Next time I make this, I am going to try refried beans instead of the black beans and maybe add some corn. Oh and I messed up and put in two cans of the chicen soup and still came out great (you cannot even taste the soup) Once I mixed the soup, cheese and salsa, I just threw all that in with the meat and mixed it together and layered that mixture on the tortillas. Oh, and I used a pizza cutter to cut the tortillas and was able to cut 12 king size corn tortillas at the same time with NO problems!! This is definitely one I am going to be making again. So easy and soo good!! Thank you so much for this recipe!!

Luscious Chocolate Truffles

I have made these with my mom every Christmas for as long as I can remember. Although we use MINT extract, not vanilla. Also, to make it easier to roll into balls, I put shortening on my hands so the chocolate does not stick. These are sooo good and sooo addicting!! We also store them in the freezer when done and eat them right out of the freezer!! :)

Chicken and Broccoli Pasta

I make this all the time. My very picky kids (age 4 and 7) eat this up!! They love it. The only thing I do differently is I mix the olive oil in with the pasta at the end as opposed to with the chicken and we leave out the onions as the kids do not like them.

Grandma Ople's Apple Pie

I made this last year for Thanksgiving at it was sooo good. I am making again this year. I did mix the sauce with the apples before I put it in the crust and made a crumple top (I am not good at making a lattice top and I LOVE the crumple top)My hubby, who does not like apple pie, ate almost the whole thing!! :) It is soooo yummy. I will not be making an apple pie any other way.Thank you so much for the recipe!!

Chocolate Brittle Surprise

OMG!! This is sooooo good and soooo easy. I want to eat it all!! I cannot believe how easy this was. I did use 1 cup milk chocolate and 1 cup semi sweet, just to use up a bag of chips and still so good. I also used a 2oz bag of planters nut topping and it was just the right amount. This one is not just for holidays, I will be making this year round. Thank you so much for such a delicious and easy recipe... Also, as other user suggested, I only cooked for approx. 11 minutes and it came out perfect!!

Microwave Oven Peanut Brittle

This was so easy and so yummy. The kids (my taste testers) LOVED it. The only problem I had was that it was a little chewy. My mom thinks it is because I made them on a rainy day?!? Does that affect it any or did I do something wrong?!? Anyway, it tasted so yummy and after putting in the freezer to harden, it wasn't quite as chewy and I was able to break it up better. Thanks for such an easy and delicious recipe!! Definitely a keeper!!

Cheesy Taco Dip

This was so easy and so delicious. Made it for a potluck at work and everyone asked for the recipe. Will definitely be making this again. Thought I would add that I cooked the meat the day before which I think added to the flavor. Made this at home just for the family too as it is so easy and so yummy!!
