Crab Quiche

Tried this for lunch today with the following modifications (sorry, but I wasn't going out to the grocery!): I made my own crust (just easy to do), used evaporated milk instead of cream (a common substitution in my kitchen), and used shrimp (no crab). But the combination of things worked very well. Enjoyed by all. Probably the only complaint was there wasn't enough (guess I should have made two).

Baked Potato Soup

Wow! This was fantastic and super easy! I made some potato skins for a party and saved the insides and used them for this recipe. The only problem: there wasn't enough for leftovers!

Veal Scaloppini with Lemon Cream Sauce

West Coast Cod and Shrimp

I tried this (with the following modifications) and it was LOVED by all. I substituted a can of evaporated milk for the heavy cream, added 1 teas. of tarragon and baked it uncovered. It lowered the fat, increased the subtle herb flavoring and kept it from getting watery.
