Whole Wheat Beer Bread

Nice bread. Very simple. Very strong beer flavor. I would recommend brushing melted butter on top before baking. Choose your beer wisely. If you do not like beer flavor - why are you baking beer bread?????

Fresh Ginger Cookies

Very good cookie. I added 1 tsp. baking soda and 1 tsp. cinnamon. I had a very nice thick cookie with the extra tsp of baking soda.

I really love these cookies. They are pretty boring looking, so if you want presentation, these are not it. They do make up for it in flavor. Great with coffee or tea.

Chocolate Toffee Crunchies

These are very good. I am giving 5 stars because out of about 7 different cookies I have made for christmas this year, my family loved these the most. Honestly, I ate most of them and will be baking another batch today.

This is a good christmas cookie. I rolled mine in sliced, finely chopped almonds instead of coconut. Not a very sweet cookie which is good, but maybe a little bit bland. I will add some nutmeg next time.

Vinegar Cookies

I baked these on a whim. The recipe was so simple I just whipped up a batch. I am so glad I did! These are awesome!! Light, crisp edges, slightly chewy center. I used 1/4 C brown sugar and 3/4 C white, as other reviewers suggested. I do not care much for nuts, so I ground mine very fine. Delicious! These taste just like a local coffee house's pecan cookies.

This is very good. It reminds me of something my Greek mother in law whom lives in Germany would make. I left out the raisins and only used half of the brown sugar. I would be interested in the original recipe. Thanks for a great hearty recipe.

Holiday Pumpkin Bread

This is the same recipe I have been making for about 8 years, after one bite of my "Aunt Eva's Pumpkin Bread". This recipe is very moist, flavorful and comes out every single time. I would suggest the following minor alterations - increase water to 1 C and decrease oil to 2/3 C. Pour the 1 C of (boiling) water over the raisins to plump them up, then use the raisin water for more flavor. I have been making it this way for 8 years and everybody loves it!

Easy Mashed Potato and Roasted Vegetable Enchiladas

I made this recipe for a private school lunch - had to be meatless. The kids loved it and the parents raved! I was asked for the recipe many, many times - even years later! I used flour tortillas instead of the corn just to make each serving a little larger.

Kaese Spaetzle

I usually do not give out 5 stars, however, this recipe deserves it - as far as spaetzle goes. I spent 6 months in Germany last year and personally, could live without spaetzle. This recipe however is better than any I had in Germany or Austria. I did crisp up some bacon and added the onions to get them nice and caramelized. I sauteed the spaetzle in the bacon and onion mixture before adding the cheese. It really was good! My husband loved it (he grew up in Germany eating tons of spaetzle) as did everybody else, including the kids. Thanks for the recipe - am making again tonight for an Oktoberfest dinner party!

Gobble Up Granola Snacks

This is a great recipe. I used honey instead of corn syrup. I let the honey and brown sugar boil for a minute or two and I also pressed the heck out of these in the pan. They turned out perfect. No crumbles at all! You do have to let them cool a bit before cutting.

Frozen Pineapple Pie

I was afraid this pie would taste like "cool whip", so I added a brick of cream cheese. Use room temp cream cheese, whip it until it is creamy. Slowly add the sweet condensed milk and whip until completely smooth. Then continue with the recipe. I will definitely use two bricks of cream cheese and use a 12 oz container of cool whip instead of the 16 oz. Cutting down on the cool whip and adding the cream cheese will give it a more "homemade - less plasticy" flavor. I would also suggest adding the lemon zest of the lemon. UPDATE: Although I thought this deserved 3 stars, I did take two of these pies to a party and EVERYBODY LOVED them. I used the no roll crust recipe from this site and people thought is was a special macademia nut crust!

No Roll Pie Crust II

I have made this crust several times now, and I have recieved compliments EVERY time. People cannot believe it is a no roll recipe. It is very crispy/flaky and flavorful. It doesn't taste like that horrible shortening used in other no roll recipes. This is very flavorful and SO simple to make. Wonderful texture. UPDATE: I am changing my rating to a 5 star - which I do not give out very often. I have made this crust MANY times now and I get raves EVERY SINGLE TIME. So, this pie crust deserves 5 stars based on taste and texture alone - not to mention simplicity!
