Angel Food Candy

I grew up on this in Wisconsin, we bought it from the store and it was a favorite Christmas treat. When we moved to Oklahoma when I was a teenager, no one had heard of it and it was not commercially available in any of the stores. I was so glad I still had the recipe from my junior high Holiday Foods class, it is the same as this recipe. It makes a great gift for our local friends since it is such a novelty here, everyone seems to fall in love with it!

Microwave Oven Peanut Brittle

We also make numerous batches of this every year during the holidays. Not sure where our recipe came from originally, but it has us stir after 4 minutes, cook 3 more minutes, then 2 minutes more after adding butter & vanilla. Comes out perfect every time, no one can believe it was made in a microwave!

Pralines

I make these pralines every year for the holidays, they are fabulous! I stir and let mine cool for a few minutes, then pour into paper cupcake liners so they don't spread out so much. Love to give as gifts, along with Remarkable Fudge.

Ratatouille

I served this at a large family get-together, thinking it might be a way to get the kids more interested in veggies. My oven was full, so I made it on the stovetop in a skillet. Everyone loved it, children included. I did add sliced smoked sausage, and a variety of colors of bell pepper, just because they were on sale and I knew it would be pretty to look at. Eggplant is on sale this week, so I will be making it again very soon. Thanks for the recipe!

Amish Meatloaf

This is the only meatloaf I bother to make anymore, since it's a hands-down favorite every time I serve it, whether at home or at potlucks. I make two changes: Instead of putting bacon strips on top, I add a package (3oz I think) of real bacon bits to the meat mixture before baking. I only make half a recipe of the sauce, and it is still plenty when I bake this meatloaf in a 9x13 pan. Can't beat those Amish when it comes to comfort food!

Quinoa with Veggies

I am trying to learn to like quinoa, and this dish definitely brought me a littler closer! I used frozen peas & carrots in place of the corn (personal preference) and added a can of black beans as recommended by previous reviews. Very important to note that the flavor was much better after a couple of days of the flavors melding in the frig. When I reheated it I melted some shredded sharp cheddar cheese on top and it was downright yummy! Kids still aren't crazy about it, they think it might be better with some meat added.
