Lemony Quinoa

I'm giving this 4 stars because the recipe should say "Serve 24-hours later." It's soooo much better the next day. Since the celery and onion aren't cooked, it's just too crunchy and raw to serve same-day. I also added a touch of olive oil. Other than that, very good!

Basil Tomato Soup

This recipe is a good start, but I modified it quite a bit. I used half-and-half instead of cream, and instead of 1/2 cup butter I used 2 T butter and 2 T olive oil (1/4 cup butter/oil total). Since it's winter right now and fresh basil is expensive, I used about 1 t dried basil. I also added another t of sugar to cut down the acidity. For me, cutting the fat by that much was not detrimental to the deliciousness of the soup! I think it would be way too greasy with 1/2 cup butter and heavy cream, and I'm not even a health nut.

Fabulous! Of course it can be customized with whatever vegetables you like. The dressing is great. I would MAYBE add a little more sugar.

Lemon Cream Pasta with Chicken

I made this and it was great. However, I didn't let the pasta cook for 25 minutes, because it was starting to get soggy after about 15 minutes (package says to cook 8-10 minutes). So I just drained off the liquid and saved it for the next time I make this. Then I added about half the cream. So I have a question- if you cook the pasta for 25 minutes, won't it get soggy? This recipe has such good reviews and no one seems to have done what I did, so I'm curious.

Black Beans and Rice

Good recipe. I would give it 5 stars after my additions: a can of ro-tel (it is spicy so maybe cut down on the cayenne if you don't like spice) and some salt and more garlic. I put it inside corn tortillas and it was delish! I can see using this as an enchilada filling with some sauce and cheese on top and throwing it in the oven on a busy night. I'm sure I will make this again, it was very easy and good.

Pizza Dough I

This crust is wonderful IF a)you like thin crust and b)you don't really want any flavors from the crust. It is very plain but very good. If you like a thicker, more flavorful crust, this isn't really the one to make.

Truck-Stop Buttermilk Pancakes

These pancakes are delicious. This recipe is probably enough to feed a whole truck stop though. I halfed it, using 3 eggs, and it still made a ton. Sooooo good!

Spinach Lentil Soup

Such an easy soup. Turns out nice and hearty- in face, you could probably add some more liquid- I would recommend broth. I might also use a can of vegetable broth instead of 2 of the cups of water. The salsa is a good idea- it doesn't end up tasting salsa-ish. Good, hearty wintertime soup.

Gourmet Sweet Potato Classic

SO. GOOD. The streusel on top is to die for. I mixed yams with sweet potatoes to balance the sweetness and make the color more interesting. I also added slightly less than the called-for sugar. My family likes them a little more chunky so I mashed them just a little bit so they were like mashed potatoes with big chunks. A big hit at Thanksgiving dinner.

Baked Spaghetti Squash Lasagna Style

Good recipe, and so healthy. Although I modified it just a touch so it's not quite as healthy- I put in about twice as much cheese. I figured I could get away with it since the veggies are sauteed in cooking spray. Oh, and I added a whole green pepper, so maybe that makes up for the extra cheese :-) Great sauce though, really good flavors. A wonderfully- vegetabley dish!

Whole Wheat Snickerdoodles I

OK the skeleton of this recipe is EXCELLENT. The only reason I didn't give them 5 stars is because I thought they lacked something- so I added about a teaspoon each of cinnamon, nutmeg, and cloves. They are moist and delicious. I might try to turn this recipe into a REALLY healthy cookie recipe and do half butter and half applesauce, and probably cut out at least 1/4 of the sugar- these are very sweet. Enjoy!

Slow Cooker Stuffing

Pretty dang good flavor. Just make sure you have a LONG time to cook it. I planned according to the low end of the recommended cooking time and it was soggy. Everyone still said the flavor was amazing though.

Brown Family's Favorite Pumpkin Pie

This is the best. Everyone in my family asked for the recipe. The texture is lighter and fluffier than most pumpkin pies (because of the egg whites)- delicious. And the streusel... absolutely delightful.

Mexican Bean Salad

So good! Definitely half the oil and vinegar. Leave everything else the same for a good, strong flavor. A 16 oz package of frozen corn wasn't too much. I also used cider vinegar and it was still good... although it may be better with red wine.

Creamy Buttermilk Dressing

MMM... This really is a great way to eat salad without feeling like you have to just dip your fork in the dressing to avoid counteracting the goodness of the salad. I even used fat free sour cream, and it was deeeelicious, and only about 55 calories per 2 tbsp! The flavors are great, but next time I might experiment with some dried parsley, or even celery flakes to give it a little more color.
