Greek Couscous

I have made this recipe several times since finding it. I LOVE it. The only change I make is to use all chicken broth and regular black olives. Mmm. It's easy, healthy, and low calorie!

Chewy Chocolate Cookies

It was nearing grocery shopping day, and my oldest was begging to make cookies for Santa but I didn't have much on hand. I typed some ingredients into a seach engine and found this. I dislike baking with margarine but did it anyway. I also added a tsp. of baking powder as one reviewer said it combated the problem of the cookies being flat. Maybe I didn't add enough because my cookies were very flat and spread lots. Regardless, they were delicious! Classic, chewy, and chocolatey, they looked like cookies you get at a bakery. I can see us making them every year for Santa as they just strike me as perfect timeless chocolate cookies that you set out on Christmas eve with a big glass of milk. Thanks so much for this recipe!

French Spring Soup

This is a great soup! I seasoned it with seasoning salt, rosemary and majoram, to taste, used half chicken broth (as many other reviews suggested), subbed arborio for the white rice, and used half and half instead of heavy cream. It was a hit, very fresh tasting and flavourful. I can't wait to have the leftovers.

Broccoli and Cheese Stuffed Shells

Delicious! My three year old is on a 'spinach is yucky' kick, so I did this instead. With a couple additions, it deserves 5 stars... I added garlic powder, onion powder, red pepper flakes and some nutmeg. I also added cheddar cheese in addition to all the other cheeses inside, and some on top with the mozza. I cooked up the whole box of shells expecting a few to break which they did, and I had just the right amount of filling. Yum!

Tuna, Noodles, Pickles and Cheese

Yummy! I used peas instead of pickles, and added a splash of balsamic vinegar in place of the pickle juice. I also used cheddar. I’ve been looking for a recipe like this for a while, combining mac and cheese and tuna salad, and this is great. It’ll be a regular lunch from now on.

Gerry's Chicken Enchiladas

These are the best chicken enchiladas I've ever made, and I've tried a handful of recipes. Absolutely worth the extra time and effort. I don't marinade the chicken, I just sprinkle it and the onions with cumin, salt and pepper while they brown. I usually just have diced tomatoes on hand so I use a big can of those, and then add a small can of chilies. I don't add the extra chilis to keep it mild for kids. I use flour tortillas because that's just what we're used to, and no enchilada sauce on top. It doesn't need it since everything is so moist between being cooked in liquid and dipped in cream, and I'm not going to ruin a slave-over-the-stove recipe with a pre prepared sauce. Sometimes I'll add olives on top with the cheese. Always a hit and an all around favourite.

Valentino's Pizza Crust

Delicious and EASY. I spread the dough over a large cookie sheet that I had spayed with cooking spray, added salt and pepper on top and pre-baked for 10 minutes at 425*. Then I added fresh basil, tomato sauce, olives, artichoke hearts and capicollo ham, and mozzarella cheese and put it back in the oven for another 15 minutes. Crust was perfectly cooked, thin and crispy, but still held up well with the toppings. This will be my go to pizza crust!

Bubble Pizza

I changed the toppings but followed the method. :) I used green peppers, pizza deli meat (ham, pepperoni and salami), and all mozzarella. I'll definitely make this again because not only is it delicious, it feeds a crowd and is very inexpensive!

Orzo Shrimp Stew

I was hesitant about this recipe on paper but it was a fast, healthy and tasty meal. I sauteed some garlic in the butter first and then toasted the orzo in the garlic butter like you would with risotto. I also added some hot sauce and lemon juice at the end, and used prawns instead of shrimp.

Lemon-Curry Chicken Casserole

This was delish. I added a layer of cooked brown rice between the asparagus and chicken to make it a more complete meal and thinned out the sauce with a cup of chicken broth. SO good. Thanks for the recipe!

Peppered Bacon and Tomato Linguine

If I could give this 3.5 stars I would. I think it has the potential to be a great recipe with a few tweaks. After reading and combining a few reviews, I used 3/4 lb. of bacon, cooked over low heat (cooks more evenly that way), 1 can of diced tomatoes, 1/2 a white onion, 1 cup chicken broth and 1/2 cup of half and half. Oh, I also drained off all but a tablespoon or two of the bacon grease. Since the sauce was thin I added a few scoops of the starchy pasta water to the sauce to help it stick to the pasta. I didn't like the cream addition, personally, and I wish I had've put a second can of diced tomatoes in, but I didn't have it on hand. I'll keep playing with this recipe until I get it right. It reminded me of bruschetta combined with pasta and bacon... and who doesn't love that?

Neat Sloppy Joes

I used extra lean ground beef, kept the onions and celery and added 1/2 a green pepper. Instead of the garlic powder I minced 1 clove of garlic and added it in with the veggies, and I reduced the brown sugar to 1 tablespoon (it would have been too sweet with the full amount). Nice quick meal, and my 2 year old was fine with all the veggies.

Italian Sausage, Peppers, and Onions

We all loved this one. I loosely doubled the recipe and added a 28 oz. can of diced tomatoes. I served it in bowls with a loaf of French bread. Delicious!

Ricotta Fettuccine Alfredo with Broccoli

Very yummy, but I made a few changes. I added 3 chicken breasts that I seasoned with olive oil, basil, salt and pepper and baked for about an hour, turning once. I just chopped them up and added them to the pasta along with the sauce. I also used frozen broccoli, and 2% milk. I just added the broccoli to the pasta water as it was boiling, for the last few minutes. I also added about a teaspoon of chicken bouillon to the sauce which really helped the flavour, but if you do this, season it to taste when you add the salt. My husband took it to work the next day and said it was very good reheated as well.

Easy Pasta Fagioli

I too used 2 cups of tomato sauce and 4 cups of chicken broth instead of the other way around. I also chopped up a whole onion and cooked the pasta in the actual soup (didn't see the need to dirty another pan!). I finished it off with some parmesan cheese over each bowl.

Cheesy Bacon Muffins

These hit the spot. I used about 3 tablespoons of syrup in place of the sugar, and got 12 muffins out of the batter. They smelled so good cooking up. Thanks!

Chocolate Oatmeal Cookies

Very yummy! I didn't have chocolate chips, other than that I followed the recipe exactly. They have the texture of a cakey cookie, and just enough chocolate flavour. The cinnamon wasn't overpowering at all so don't be afraid to add it.

Spinach Roll-Ups

I used cream cheese instead of mayo and halved the ranch dressing mix. I made them as wraps instead of little pinwheels so I didn't need to cut them, but if you do, use a sharp knife and wait til they're chilled. They were pretty tasty and next time I'm going to try them with flavoured tortillas.

Black Bean Lasagna

This was really good, but even though I added three avocados, there wasn't enough guacomole for more than one layer, and there was too much bean mixture to fit in the pan. The entire layering scheme was also off. In terms of taste though, I would make it again.

Sex in a Pan II
