Fruit Salsa with Cinnamon Tortilla Chips

The description is true- the salsa is great if you throw in what you have on hand! I used unpeeled apples, slightly unripe mangoes, and a banana. Awesome! I made my own tortillas and they fried very quickly- about 15 seconds per side. Next time I'll bake or fry in shallow oil so they don't get quite so crunchy.

Banana Pancakes with Berries

These are tender pancakes, and a bit crepe-like. Wonderful! They were a hit with my family, too, so this will be our usual pancake recipe now I think. They were plenty nice without the strawberries, just with butter and syrup.

Pie Crust III

Easy to make and so tender and flaky, just like the recipe says. Easy to press into place- I used individual baking dishes, so it's much faster that way.

Coconut Custard Pie III

Simple and wonderful. I used cinnamon and fresh coconut. (I live in the South Pacific so a new way to use all our coconuts is very welcome!)

Jay's Signature Pizza Crust

Great crust, but it didn't really turn out like a pan pizza for me. More thin and crispy, and soft on the inside. I pre-baked the crust for 10-15 minutes. Nice!

Orange Whole Wheat Pancakes

Oh, yum! Hearty but moist. A perfect breakfast. I used fresh orange juice, omitted the orange extract, and added raisins and a few chocolate chips. A keeper!
