Great. A really authentic flavour and virtually calorie free when made with fat free yoghurt. Made a massive quantity Even though I only made a third.

Healthy Banana Cookies

These were a real surprise. It's the first time I've done any baking without sugar so I had my doubts but these were great. They held together beautifully (no egg required )and were a really tasty guilt-free treat, that I'm sure I'll be making again and again. I used 2 tsp of cinammon and I definitely think some spice is required. I used a mix of dates, prunes and apricots simply because I didn't have enough dates. As long as the bananas are over ripe and therefore sweet I don't think it matters too much what type of dried fruit you use.

Sweet Potato Pecan Waffles

Very tasty and a nice way to use up some roasted pumpkin I had left over. I used cinammon instead of nutmeg and 1/4 tsp of salt was more than enough. If you're not dousing them in syrup or using tinned s.p or pumpkin I'd add another tbsp of sugar to the mix.

Chicken Satay

Made the chicken very tender. I found it a little salty but my husand thought it was fine. I used diced chicken, skewered and cooked on the barbie. Simple tasty and will do again.

Pumpkin Bread IV

This made a wonderful moist loaf and I was delighted to have one for the freezer. I used one tin of pumpkin to make 2 loafs which was a bit less than I should have had according to the converter but it appeared to make no difference.
