I had never worked with Arborio rice before, let alone made risotto before and I found this recipe relatively easy to follow. I added chopped broccoli and spinach to it and everything was perfect, but I feel like the rice was slightly undercooked. Next time I will cook the rice longer (this will require more broth) and I'll probably add a couple spices/herbs just to cut the relatively bland flavor slightly. Very easy (although it does require constant attention) and relatively quick for a fancy-looking meal that is sure to impress.
