Healthier Broiled Tilapia Parmesan

This is the first tilapia that my husband really loved! We were tired of baking it with canned tomatoes and herbs and wine, so this was a very welcome recipe find. Very moist and flavorful and not at all greasy. I used about a tablespoon of a soft butter/olive oil blend instead of butter, a tablespoon of regular mayo, 1/4 C parmesan cheese, lemon juice, Old Bay, and dried basil, and it was way more than enough for almost a pound of fish. Rubbed a little olive oil on both sides of fish before broiling. Followed broiling directions as given. Perfect!

Best Bread Pudding with Vanilla Sauce

Excellent! I cut all of the sugars in half and it's still plenty sweet. Also cut butter back slightly. I used a large loaf of Italian bread cut into 1 1/2" cubes, well toasted in the preheating oven for about 10 minutes. I think that's the secret to it not being overly soggy. Used 2 1/2 C skim milk plus 1/2 C half & half in the pudding part, and in the sauce 1 C skim milk and 1/4 C half & half. Plenty rich. Will make this often!

Quinoa with Chickpeas and Tomatoes

Fabulous! A big hit even with the quinoa skeptics! I used black beans since that's what I had on hand, cooked quinoa in chicken broth, and added one diced avocado and about 1/2 cup of finely chopped red onion, as others had suggested. Had a little fresh cilantro, which was great, but the parsley would probably be just as good. Definitely a keeper!

Grilled Chicken Burgers

Fresh Southern Peach Cobbler

I've now made this three times in 2 weeks! Much easier and lower in fat than pie, and just as good. I added an extra tsp. of corn starch so that the peach part is a bit less runny and more of a pie consistency when it cools. A word of caution - be sure the dish you make this in is big enough so that it's only filled 2/3 or so high. The last time I made this I doubled the recipe and thought I was using a big enough casserole dish, but it bubbled up and created quite a sticky mess on the bottom of my oven.

Caesar Salad Supreme

Half non-fat plain yogurt and half mayo created a nice, not too thick consistency. I also drizzled enough olive oil in the food processor to process the minced garlic and anchovies to a paste before adding other ingreds. Didn't add cheese to the dressing since we like to sprinkle it over the salad. Two good-sized garlic cloves make it plenty garlicky - I think 3 would be overwhelming.

Italian Rice Pie II

Didn't care for crust at all - very thick and dry. Crust did not burn because I covered it during baking. The filling is tasty but also a bit dry, and I cooked the pies 10 minutes less than recipe stated. I will continue to look for a different recipe.

Quick and Easy Brownies

A keeper! I cut the sugar to 1 1/2 C, cut the flour to 1 C, and added about 1/2 C of chocolate chips. The simplest brownie recipe I've ever made and a nice compromise of cakey/chewy.

Potato Leek Soup I

I found this recipe to be very bland as is, but the lack of cream was appealing enough to perservere to find a remedy. The addition of a large onion (chopped), few stalks of celery (chopped), 2 cloves of garlic minced, and a finely minced large carrot sauteed with the leeks was a big help. To cut down on the starchy-ness, I boiled the potatoes in water, drained, then poured the chicken broth over potatoes before puree-ing in the blender. Needs lots of salt (2 tsp).
