Singapore Noodles

I LOVE curry, but I found the curry flavor in this dish to be way too strong. Even after adding some sesame and chili oils, all I could taste was curry powder. I would advise using 1 TBSP of curry powder to start and then adding more if you want a stronger flavor.

Spanish-Style Chicken Stew

Hearty Vegetable Lasagna

Great recipe! I added some low-fat cottage cheese and chopped spinach to the ricotta mixture. I also added some zucchini slices to each layer. Turned out beautifully:)

Easier Chicken Marsala

Great recipe! You won't even miss the fat! I added a large can of chicken broth, thickened the sauce with a little cornstarch, and served with angel hair pasta. Delicious!

Pumpkin Turkey Chili

This was very good, but may have been a little bland without some extra spices... I added some extra chile powder for a more spicy flavor and added quite a bit of cumin to the turkey while it was browning. Loved the texture the pumpking gave this dish!

Cheese and Broccoli Chicken Soup

Delicious! Try it with cubed ham instead of chicken - it's to die for! I also recommend using low-sodium chicken broth instead of bouillon, especially if you are using ham as this will add more salt.

Crustless Spinach Quiche

EXCELLENT RECIPE, especially for low-carb dieters. You won't even miss the crust! I added some mushrooms, which were sauteed with the onions ahead of time to remove excess moisture. I also added some crumbled bacon to the bottom of the pie pan before scooping the egg mixture in. To compensate for the extra ingredients, I added 2 extra eggs. It was FANTASTIC! Muenster is the PERFECT cheese for this recipe because of its creamy texture and subtle flavor. You must try it! To find shredded Muenster is impossible (it is usually only sold in slices). However, you can go to the deli section of your grocery store to ask them to cut off a 1-lb. "brick" of Muenster for you. It's worth the effort.

Mushrooms in White Wine Sauce

This is very good, but quite rich for a side dish. I poured it over some almond-crusted chicken and brown rice, which was delicious. I used dry sherry wine and added a splash of heavy cream for a creamier color/texture. Overall, I would definitely recommend this recipe to be used as a gravy/sauce, but not to be eaten as a side-dish.

Chicken Cordon Bleu II

Like several others have said, the chicken was OK, but the sauce was DELICIOUS. I felt as though the sauce over-powered the flavor of the chicken. I couldn't even really tell that I had gone through the trouble of putting cheese and ham inside the chicken because all I could taste was the sauce. Most of the cheese melted out of the chicken anyway.

Taco Seasoning I

GREAT RECIPE! I used 1/2 the salt and didn't miss it a bit. This seasoning is great on ground beef, but is even better on chicken! Coat chicken with olive oil and generous amount of seasoning, then pan-fry until "blackened." Delicious on taco salad!

Absolutely Fabulous Greek/House Dressing

I've made this dressing several times now and it is definitely the BEST EVER! I use 1/2 the salt (I promise you won't miss it) and add some crushed red pepper for a little extra kick. This is definitely a keeper! Great not only on salads, but also a delicious marinade for chicken. YUM!!

Chicken Strawberry Spinach Salad with Ginger-Lime Dressing

Delicious! I used only 1/2 of the ginger for a more subtle flavor. I also added some finely chopped fresh cilantro and black pepper to the dressing. It was perfect! I'll definitely make this again.

Herb Roasted Pork

I can't begin to tell you how easy and delicious this recipe is. The glaze is to die for! I used 1/2 balsamic vinegar and 1/2 red wine vinegar, which gave a terrific flavor. And the sage, though subtle, really makes the recipe. I made a 2lb roast and doubled the glaze (as suggested by many others). However, I found that it was way too much glaze with such a small roast, even after using extra for dipping. That's just fine with me, though. I put it in the fridge and will be trying it on pork chops later this week. I HIGHLY recommend trying this one!

Down-South Style Green Beans

Swedish Meatballs

The sauce is AMAZING - just like my grandmother's. However, I did not care for the meatballs. The texture was strange - they were too soft, and I felt there was a little too much onion in them. I did add some nutmeg, but it still seemed that something was missing (in the meatballs, that is). I will definitely make the sauce again, but probably with a different meatball recipe.

Spinach Artichoke Feta Ball

This was a big hit at a bachelorette pary I attended over the weekend. I didn't even bother with the ranch dressing mix - just seasoned with a little salt, pepper, and dried parsley. I also rolled it in sliced almonds to make it look nicer. I will definitely make this again!
