Cranberry Sauce Extraordinaire

This is the 2nd year I've used this recipe at Thanksgiving. The recipe is simple and the results are delish. Any leftovers can easily go on a bagel for a yummy breakfast or healthy snack.

Oatmeal Raisin Cookies IV

Amazing recipe. First time giving this recipe a try as last winter the store had run out of rolled oats. I eyeballed the spices...as I love cinnamon naturally I added more + nutmeg. These came out fantastic but I also read a few reviews for some helpful pointers. Soaking the raisins & allowing the butter to soften to room temperature are a noted few. I definitely will make again.

Golden Green Bean Casserole

I decided to shake up the Thanksgiving routine this year. Normally I make my green bean casserole with creamy mushroom soup so I thought the golden mushroom soup would be interesting. The dish turned out fabulous. The only changes I made was omitting the red pepper and adding chopped, crispy bacon. Yummy!

Award Winning Soft Chocolate Chip Cookies

Tried the recipe with suggested modification of additional vanilla extract, baking soda, & salt. I don't have a mixer & creamed/mixed all ingredients by hand. The cookies were a hit & I'll make these again. Perhaps I'll omit walnuts next time to shake things up.

Tomato Asparagus Salad

Cola Pork Chops

Followed instructions mostly as written. Took some advise from other reviews and I browned the chops before baking in oven. I added some minced garlic to the cola/ketchup mixture for added flavor. My family loved it but I thought it was okay - nothing against the recipe - a bit too sweet for my tastebuds. Nevertheless, I am a fan of any recipe that gets my picky kids to eat.

Sugar Cookie Icing

I needed a recipe to ice my holiday butter cookies. This was my first time making icing from scratch so I started out following the recipe to a tee. I ended up adding slightly more milk to get the consistency that I preferred. The flavor was exquisite and the texture was perfect. I got rave reviews from my family. I will make this again & again in the future but will try to get creative with other flavors & colors. Thank you!

Holiday Butter Cookies

This was my first time making butter cookies and wanted a fun Christmas Day activity to do with my boys. I doubled the recipe but followed the recipe exactly as is. To my dismay I didn't have access to a mixer so I attempted to make them entirely by hand. From creaming the butter to mixing in the flour it was definitely work. Following the baking time as listed yielded cookies slightly too doughy for my taste, so I up-ed the baking time to get the crunch/softness that I preferred. The flavor was tasty and subtle - perfect for icing. I will make again & again in the future... but definitely with a mixer.

New Year Spinach Fettuccine with Scallops

Awesome, awesome recipe. I basically followed the recipe except that used whole wheat fettucine, sauteed the spinach with some garlic and omitted the white wine (didn't have any on hand). After reading several reviews swearing by the wine and fearing for the dish to be bland, I instead used several dashes of rice wine vinegar to give a little kick. I will definitely make this again & again.

Spicy Slow Cooker Black Bean Soup

Added all ingredients in the crock pot the night prior and left in fridge while the beans soaked overnight. I used fresh jalepeno, cilantro, and red onion and added everything else as instructed. Due to the advise of another I added 2 packets of sazon which really enhanced the flavor. I opted also not to puree half the soup (my blender is broken). The soup came out perfect and not hot at all - the entire family loved it. I will make this again.

Delicious Black Bean Burritos

These are very yummy indeed. I omitted the bell pepper simply because we didn't have any on hand, but it turned out great. I also made them into tacos instead of a burrito. My vegetarian hubby and I loved them.
