Blue Cheese, Spinach Meat Loaf Muffins

Make sure you use an EXTREMELY lean ground beef or turkey. Do not make the mistake of using anything less than 90% lean meat. Other than that, I would half the cheese and double the spinach. It was delicious as written, but the cheese taste was a little overwhelming. I would prefer it a little bit more mild. I also added fresh rosemary to the meat mixture after grinding it in a food processor. Very quick and easy to make.

Garlic Spinach

This is fantastic. I chopped fresh garlic in the food processor the second time and caramelized it in butter before adding the spinach. It was delicious! I highly recommend.

Baked Ziti IV

This was truly fantastic. I left out the sausage because I didn't have any, I did one half sour cream and one half ricotta instead of all sour cream. I kept the rest of the recipe the same and it was the best ziti I've ever had. It was amazing! I know some of you are probably wondering about the sour cream and are hesitant to use it...as was I, but it is not to be skipped. Added a great creaminess that you just don't get from ricotta alone. Try it, you will LOVE this recipe.

Salsafied Chicken and Rice

I think it would be very bland as written. I followed other suggestions and make several changes. I added homemade taco seasoning while browning the chicken. I added black beans and substituted brown rice for the white, for additional fiber and to improve the overall healthiness of the dish. I omitted the chicken broth because I used instant rice, so I used the juice from the black beans and a bit of water. I then added one jar of salsa, combined it all in a casserole dish and topped with some shredded cheddar cheese (not a lot). I baked it at 350 for 20 minutes and it came out delicious. I believe the key to this dish is making sure you season the chicken before browning it!!

Sushi Roll

A lot of prep work, but tons of fun and very, very good! I made the rice in a rice cooker, it came out perfect! Make sure you use sushi rice as the rice really makes the difference here. Whole Foods had excellent nori sheets, I highly recommend. You can change it up any way you want to. We added lobster tail to some...yummy!

Crispy Rosemary Chicken and Fries

This was incredible. I didn't change much at all, other than adding mushrooms and carrots (it desperately lacked color) and squeezed some lemon over the top. I've given the recipe to a couple of other people and they loved it as well. This one is a keeper!!

Southwest Chicken

I took the advice of others and cut the chicken into small pieces, cooked them with garlic and onion and also added a lot of cumin and chili powder. Served it over brown rice. It was delicious. If I wasn't trying to eat healthy, I definitely would have made this with cornbread, as I think that would be fantastic!

Italian Spaghetti Sauce with Meatballs

Added oregano and basil, cut the amount of garlic in half and cooked the meatballs in the oven for a bit first. Also put the tomatoes in the blender before I started the sauce. Turned out FANTASTIC. Loved it and can't wait to make it again. Made the meatballs with 2 eggs, very moist and delicious.

Aunt Millie's Broccoli Casserole

I felt like the flavors competed with each other and didn't really mesh well. The topping was unnecessary in my opinion. The broccoli was cooked perfectly, but it could have done without the pepper and about half of the cheese. I might make again with radical changes.

Slow Cooker Tamale Pie

I took the advice of other reviewer's and added onion to green pepper to the beef mix while browning. After reading that it was dry, I added more enchilada sauce. I baked it in the oven for 40 minutes at 375 and it was very wet. The liquid wasn't absorbed by the corn bread and it didn't cook down. It tasted good, but I can't imagine it was if prepared as the recipe calls for.

Butternut Squash Soup

This was incredible!!! I've never made anything with butternut squash before so I did take some of the other reviewer's suggestions. I halved the squash, brushed it with olive oil and then roasted it. It was super easy to peel after that. I added some garlic to the onion, used half the amount of cream cheese and left out the cayenne pepper. It was perfect.

Simple Spinach Lasagna

This was fantastic. I followed it pretty much to the letter, but used ricotta instead of cottage cheese and used fresh spinach. It was delicious. I loved it, everyone had at least two servings, some had three. It is also great the next day. Will definitely make this a staple.

White Bean Chicken Chili

This was great, but boy was it spicy. I had never cooked with tomatillos before and I didn't know how spicy it would be. Used two cans of white beans, other than that followed the recipe directly. It is a little soup like, even with a couple of tablespoons of cornstarch. I generally like my chili a little thicker, but I would make this again.

Burrito Pie

Made this twice. The first time I would have only given it a couple of stars because I could not cut through the tortillas. The second time I spread refried beans on one side of the tortillas and it came out perfectly. I used whole wheat tortillas both times. The taste was delish and everyone enjoyed it!

Cheeseburger Meatloaf

I mixed all the ingredients together, reduced cheese to one and three quarter cups and baked for an hour at 375. It was delicious. Even my Mom, who is not a meatloaf lover, liked it very much.
