Blue Cheese, Spinach Meat Loaf Muffins
Make sure you use an EXTREMELY lean ground beef or turkey. Do not make the mistake of using anything less than 90% lean meat. Other than that, I would half the cheese and double the spinach. It was delicious as written, but the cheese taste was a little overwhelming. I would prefer it a little bit more mild. I also added fresh rosemary to the meat mixture after grinding it in a food processor. Very quick and easy to make.

Garlic Spinach
This is fantastic. I chopped fresh garlic in the food processor the second time and caramelized it in butter before adding the spinach. It was delicious! I highly recommend.

Baked Ziti IV
This was truly fantastic. I left out the sausage because I didn't have any, I did one half sour cream and one half ricotta instead of all sour cream. I kept the rest of the recipe the same and it was the best ziti I've ever had. It was amazing! I know some of you are probably wondering about the sour cream and are hesitant to use was I, but it is not to be skipped. Added a great creaminess that you just don't get from ricotta alone. Try it, you will LOVE this recipe.
