About this Cook
I am a stay at home mom of 2 beautiful girls, Estrella(Star) and Dulce(Candy). I get my mexican cuisine interest from my husband who hails from Jalisco, Mexico. VIVA MEXICO!!! My mom's side of the family loves food, we even have our own family cookbook compiled of everyones favorite recipes. :) I love Rachael Ray, cause she gets her inspration from mexican cuisine.
My favorite things to cook
Pozole(crockpot), ceviche, menudo(crockpot), pancakes, crockpot stews, chili, tacos, spaghetti, tres leches cake, spinach manicotti, flan, mainly spanish food. But I also like to make mashed potatoes, cavitini, green bean casserole.....and so much more!
My favorite family cooking traditions
Biscuits and gravy!, baked beans, potato salad, scalloped potatoes, potato soup, macaroni and cheese, fried chicken, basically southern cooking
My cooking triumphs
My 1st time making a tres leches cake, it was so good my hubby says it gets better and better every time I make one because it tastes EXACTLY like the tres leches cakes back home in mexico :) Plus my triumph is to hear my hubby say my food tastes good every time I make something, especially when I remember my ex husband used to say that my cooking sucked.
My cooking tragedies
Making chicken nuggets one day and the apartment filled with smoke and fire alarm going off! HAHAHA Putting aluminum foil over flan and it ended up curdling when I knew better than to put foil over the baking dish. Another tragedy was my spaghetti filled with too much chili powder, where I was living, we had no salt or other seasonings in the house and the sauce was bland so I ODed on the powder.

Easy OREO Truffles
I made these for my daughters Kindergarten class and everyone, even the teachers love them! My daughters teacher is begging me to make these for next snack day! :) I like to use vanilla almond bark and use sprinkles according to the season (green and red sugar crystals for Christmas, hearts for Valentines, etc.) to help some of the decor show up. This week, I have snack day and w/Easter coming I may just use the baker's chocolate w/the pastel Easter sprinkles I got so they show up. :)

Good Old Fashioned Pancakes
This is the only pancake recipe I use! I added a little bit more milk cause I like it runny (this recipe its thick), vanilla, and if I don't feel like melting butter I just use oil, still tastes just as great. To ppl who say its too much salt, don't use a heaping teaspoon, level the spoon out. Don't read the reviews any further, give this recipe a try.....you will not be disappointed!

Ham Breakfast Braid
Soooooo goood! I made this as soon as I wrote down the recipe and I had cut down on the servings because its just me and my kids (hubby's @ work) I love how easy it was to make and how quick it was too! Since I had scaled down the recipe I only had to bake it for 13 minutes. I also used velveeta cheese I shredded myself. Kids and I gobbled this up! I will so make this again and again! Actually I want to run to the store and get the ingredients for the original recipe yield so I can make it for my hubby, I'm sure he'll love it!
