Eggplant Parmesan II
Thank you, thank you!! I love eggplant parmesan, but my husband thought he hated it. well, was he ever surprised. He loved it too!!. I did increase the time to bake the slices and baked them at 400 then turned it down after it was all put together. I decreased the ingredients to make 4 servings. We'll have the left-overs for lunch tomorrow.
