Linda's Lasagna
Very tasty, simple lasagna. This was kid-friendly which is great, but I think if I were making it for a more adult palate, I would add some veggies. Wonderful use of cottage cheese in place of the regular ricotta- just don't forget to blend it with the egg and parmesan so that you get a nice smooth texture more like ricotta. This is now my go-to lasagna recipe! Thank you!

Baba Ghanoush
Great recipe! I used an entire bulb of roasted garlic rather than 2 cloves of raw. Roasting it gives you a really nice caramelized flavor, but it's much milder than when raw, so that's why I used so much more. I also roasted the eggplant and garlic on a gas grill rather than the oven, but either would be great. I never need to go to a Greek restaurant for good baba ganoush again! Thank you so much!

Slow-Cooker Chicken Tortilla Soup
Wonderful recipe! As others had suggested I used 3 frozen chicken breasts and then shredded them towards the end of the cooking time. I also used store bought tortilla chips to keep it simple. It turned out great. Very rich and hearty! Thank you so much for this recipe.
