Potato Chips

I should have read the reviews and looked closely at the photos first. :) I took the instructions literally and sliced the potato "paper-thin", which was really too thin. My first batch burned and stuck to the plate. You need to just make it thin, not paper-thin. Other than that, a nice recipe and versatile too.

Chess Pie

Winter Leek and Potato Soup

I made this twice in the last month. It's a simple soup, and if you aren't already a fan of the leek-potato combination, you probably should skip this recipe. My slight changes: I use vegetable broth instead of chicken, fresh garlic instead of garlic powder (sauted with the onion and leeks), and cheese on top before serving instead of stirred in. Some tips: I slice the potatoes thinly instead of cubing them--they cook faster that way and it is easier to mash them in the pot. I mash them roughly before adding the cream. The soup ends up with a lumpy, rustic consistency. So comforting on a cold day!

Dark Chocolate Cake II

Everyone seems to like this cake. I think it's okay--could be more...distinctive tasting? But it's a crowdpleaser nonetheless. Also--I made this into mini-muffins once and they stuck to the pan horribly. Use liners.

Zucchini Brownies

I reduced the sugar by 1/4 cup (full recipe). It was still too sweet. I had a small piece and had to wash it down with 2 cups of milk. Next time, I'd reduce the sugar by 1/2 cup. Thank god I didn't make the frosting. Were it not for the amount of sugar, I'd give this 4 stars.

Heavenly Angel Food Cake

Sandy's Chocolate Cake

Not super-chocolatey but chocolatey enough. The crumb and texture is GREAT. I made the recipe for 9 servings and got 12 cupcakes and an 8" cake out of it. Not too light, and not dense. I think the chocolate flavour should intensify the day after. (Didn't make the frosting.)

Absolutely the Best Chocolate Chip Cookies

That sound you hear is the clatter of my teeth falling out after I ate half a cookie. I followed the recipe exactly but I reduced the sugars to 1/2 cup each and only 1.5 cups milk chocolate chips (I prefer semi-sweet, but didn't have any on hand). But these still came out WAY TOO SWEET! The texture is nice (it's a soft cookie, not a chewy one) but I would reduce the sugars and use semi-sweet chocolate instead of milk if I were to make these again.

Blueberry Oat Muffins

This is okay. It's like all the reviews say. Texture is scone-like, not cakey. Has a mild chemical taste, but the OJ flavour is intensified the next day. A shot of vanilla would have improved things.

Zucchini-Chocolate Chip Muffins

I used half plain yogurt and half the oil (canola) instead of veg. oil, and used 50% more chocolate. Also placed a chocolate chunk on top of each. Muffins came out moist and delicious!

Simple White Cake

This is a very good white cake. I used 3/4 the amount of sugar and sifted the flour before mixing. I did add a bit more milk but I don't think it would have made much of a difference. I made this twice in a matter of days, one with strawberries and cream and the other with blueberries and cream. Delicious.

Exchange Gang Pasta with Shrimp

Whoa nelly, this makes a lot of food! I added the tomatoes at the end so they were still a little firm, and I only fad frozen spinach. I also found that I needed a little more half-and-half. It turned out great though. I was looking for a recipe that I could make fast and without having to go to the store, since we were low on groceries and it was raining out. This one fit the bill. Thanks AR exchange gang!

Coffee Souffle

Pretty good. I think the brewed coffee should be rather strong for best flavour. Also, the custard never got *very* thick but it set fine. I think this makes 10 smallish servings or 8 moderate ones.

Sukhothai Pad Thai

Great stuff! I made the sauce as written, but without the sugar added at the end. I toasted some raw peanuts and ground some of them using a mortar and pestle to have different crunchiness. I used shrimp, chicken, and tofu. Added scallion and cilantro to garnish, but mint and lemongrass would be good garnishes too.

Healthier Graham Cracker Crust

It tastes good and is low-fat, but I found a few problems: it doesn't make *quite* enough for a standard 9" pie pan, it was too soft, and it became soggy after sitting in the fridge for a day. BUT I think I would use this recipe again if I were to make a pie that I know can be finished at one meal.

Broiled Tilapia Parmesan

This is a good dish for people who don't like fish, I think. My husband doesn't like fish at all, and he really likes this dish because of the topping, which is very strong and savoury. On this site I prefer the recipe for Hudson's Baked Tilapia.
