Sweet Restaurant Slaw

This is an excellent sweet slaw recipe. After looking at reviews, I made a few subs; half Splenda and half sugar; half real mayo and half lite mayo; celery seeds instead of poppy, sour cream in place of oil, and rice wine vinegar in place of white vinegar. Three of us polished this off with the slow cooker pulled pork sandwich recipe from this site!

Ninety Minute Cinnamon Rolls

I've never made cinnamon rolls from scratch before, but I thought I'd give these a try based on the many positive reviews. These were some of the best things I have ever put in my mouth. I was so proud of myself! I followed the directions exactly, baked them in a 9" x 13" pan, and made the cream cheese frosting mentioned by another reviewer. They were simply amazing, and I won't hesitate to make them again. I did use the proofing setting on my oven to let them rest/raise both times as it was a cool and rainy day here. Next time, I will add some chopped pecans per my husband's request. Thanks for a simple and wonderful recipe!

Mom's Easy Creamed Chipped Beef on Toast

I had tried another chipped beef recipe on this site, but this one was far better. Creamier. I added a bit of smoked paprika, a dash of garlic powder and a dab of Dijon mustard. The Worcestershire is a good idea, too! Served it over waffles for dinner. Wonderful!

Caramel Frosting VI

I just made this for the Apple Butter Spice Cake from this site for my husband's birthday. I did not have an issue with it setting up quickly, but I used dark brown sugar as that's all I had, so maybe it had a little more moisture? Definitely more like a glaze than a frosting. The flavor is wonderful - in fact, I was thinking that it would be an excellent dip for apple slices as well! Too bad I had licked the pan clean before I thought of it!

Bubble 'n' Squeak

My whole family enjoyed this, as did a visiting 4-year-old neighbor child, who declared "That was soooo good! I never had cabbage that I liked before!" I was looking for a way to use up some potatoes and leftover ham, and this was perfect. I boiled the potatoes (not too long) and then cubed them. I used smoked paprika. I also used maple bacon, I love that stuff. I like the idea of using Spam instead of ham; might try that next time. Accompanying it with fried eggs also sounds good. No leftovers here!

Brown Sugar Meatloaf

When I first read this recipe, it sounded kind of dull, but I decided to give it a chance, and now it's the only meat loaf recipe I use. I use half ground turkey breast and half lean ground beef, and I also put the glaze on top. To liven up the turkey base, I add a splash of Worcestershire and smoke flavoring to the meat along with minced garlic and Italian bread crumbs in addition to the regular recipe ingredients. Like many others, I add 1T. Worcestershire to the glaze and another splash of smoke flavoring. This always comes out moist and flavorful!

Baked Beans II

When making baked beans from scratch, I love Alton Brown's Once and Forever Beans. But this recipe is the best I have found for turning regular canned beans into something amazing. I double the recipe, use Hormel Black Label Maple Bacon on top and cook them as along as I can - at least two hours - and end up with beans that are simply wonderful. Great for potlucks and even better warmed up over the next couple of days. Heck, give me a side of Grandmother's Buttermilk Cornbread from this site and I've got dinner.

Cedar Planked Salmon

This was awesome! My husband, who normally dislikes fish, was not terribly excited about trying this, but ended up declaring it "the best fish he'd ever eaten!" He actually finished a good-sized piece and is looking up ways to make his own planks for future use. Really great way to prepare salmon!

Mom's Fried Fish

Did not make the tartar sauce, but enjoyed the fish. I used orange roughy and added some seasoning (garlic salt, paprika and pepper) to the saltines. Fish was crispy and light. Non-fish-loving hubby even said it was good!

Oven Fried Chicken II

This was quite tasty. I wanted to try something a little different, so instead of bread crumbs. I used dry stuffing mix that I crushed in a bag with a marble rolling pin to the consistency of bread crumbs. Added some garlic powder to the salt and pepper with the flour, and skipped the paprika as I thought it would not work with the stuffing seasoning. used a little less oil and let the coating rest before putting it into the oil. I also used skinless, boneless thighs, which cooked faster. It came out very crisp. A little of the stuffing stuck to the bottom of the pan on a couple of the thighs, but not much, and the chicken was moist and flavorful. Smelled great cooking - my husband could not wait to eat!
