Roast Chicken Pita Pockets

I made a low fat version of this by using fat free yoghurt and fat free sour cream instead of the mayo - it turned out great. Very creamy and rich without the guilt. The rest of the dressing ingredients in the recipe were already full of flavor so we didn't miss the mayo. I also removed all the chicken skin (I know, all the fun bits!). I just eyeballed the whole recipe and it still turned out yummy! The creaminess of the dressing counters the relative dryness of the pita and chicken. I kept the veggies on the side (used leftover salad instead of shredded lettuce) until we were ready to eat. Hubby took the leftovers to work the next day (pita, chicken with dressing and veggies all packed separately to prevent sogginess). So quick and easy, I know this will be a regular at our table. Hubby already requested for this to be packed for his lunch regularly. :)

English Muffins

Mine didn't turn out dense at all! They were beautifully fluffy and soft with nooks and crannies. I did bake them, not pan fry... I just don't have the time to tend to the fire/pan. My husband is over the moon - he hates the 'freezer burn' taste of the store-bought kind. Oh yes, I did use butter instead of shortening cuz that's all I had on hand. The aroma is beautifully buttery and delicious. Thank you!

Mexican Whole Wheat Flour Tortillas

I could only find plain bread flour so I mixed half with whole wheat flour, and used olive oil instead of shortening. Turns out fabulous! Super easy, super tasty! I'll never buy tortillas from the store again!

Baba Ghanoush

My family complained that it was bitter. I added a little sugar in an effort to cut the bitterness (I know, I know, it doesn't belong!) and I liked it. But my family still thought it was too bitter. I'll try the tips to let the eggplant sit after baking to get rid of the bitterness if I should try this again...

Quinoa Tabbouleh

Very good recipe! I did have to make some changes based on what I had in my pantry and reviewer suggestions - didn't have parsley, had only 1 carrot and Japanese cucumber. I also thought I'd pump up the flavor so I dumped a small packet of feta cheese with Italian seasoning and the accompanying oil. Woohoo! That hit it out of the park. Should be a staple in my household for a while.

Parmesan Sage Pork Chops

Chewy Chocolate Chip Oatmeal Cookies

My husband who doesn't like cookies LOVED it. I did add a little extra flour and oats like some reviewers suggested. But I think the suggested full tsp of baking soda might be too much for sensitive folks like me. My hubby didn't taste it but I did. Will try again with less baking soda.

Terry's Favorite Easy Chicken Pie

I followed the recipe exactly but used fresh carrots, potatoes and celery which I precooked. The taste of the pie was overwhelmed by the cream of chicken soup. Won't be making this again.

Mediterranean Quinoa Salad

My husband absolutely LOVES this recipe! I didn't use all of the oil and balsamic because the lemon seemed like it was a LOT. I also used Inca Red Quinoa, not sure how different it is from regular. He says he has been craving these flavors which he can't find in restaurants here. So I've been ordered to ensure that there is always a portion of this in the fridge (I served it cold with roast chicken) Delish!

Tomato Chicken Parmesan

I've never had Chicken Parmesan but it is my husband's favorite. So I tried it. Its good. He likes it. Easy to make. I also made it "light" by using mozzarella and baked the chicken before adding it to the pasta sauce. I also added more spices to the store-bought sauce... Looks like its found a spot on my menu.

Light 'n' Creamy Mashed Potatoes

My husband went NUTS over this recipe. He's on a diet so we try to go light on everything... and man, this recipe just hit the spot! Only trouble is, he loved it so much he almost ate the whole batch! So much for the diet, huh? LOL.

Baked Sweet Potato Sticks

Even my husband who is not crazy about sweet potato took to this one... We love spice but didn't have paprika so used a Cajun seasoning which I used liberally. I probably cut the sweet potatoes a little too thin so will do the wedges next time but everyone in my family loves this at dinner and as a grazing snack!

Greek Chicken

Off the charts good! I mixed cream cheese with blue cheese, pan fried diced portobello mushrooms with garlic and a lil salt, and swirled it in there... SUPER. I CRAVE this. Next time I'm going to try cutting a pocket into the chicken breast to see if it is easier than rolling the chicken breast.

Traditional Pita Bread

Had a lovely crust and a dense texture inside. My husband enjoyed these alongside Peppy's recipe. Both are good - just different. I tried the tip to pan fry them but it didn't work out for us.

Beautiful! Lovely, light, airy texture. I can see myself making these over and over... I just had trouble transferring them from countertop to wire cake rack - they were so deformed by the time I was done :( On the bright side, I'll NEVER pay for over-priced store pitas again!

Fluffy Pancakes

These pancakes were awesome! Soooo fluffy... my son ate more than usual so it is a winner for me! I had buttermilk on hand so used that instead of milk and vinegar. I also added some rolled oats which I had pulverised in a blender for extra fiber and it was still great!
