Chicken Souvlaki Gyro Style

My first attempt at cooking for my husband in 3 years... He loved it so much (especially the tzatziki) that he's asked that I make it again 2 days later! I even messed up a bit by using too much balsamic vinegar in the marinade and used rice wine instead of rice vinegar in the tzatziki, haha. I also fried the chicken in coconut oil and the dish turned out fantastic! Definitely a keeper!

Chicken Marinade

Pretty good! My DH liked it very much - I cut the chicken breasts into slivers, used dark and light soy sauce and added a dash of oyster sauce. I also used red cooking wine instead of sherry cuz I didn't have any sherry. I also pan fried it instead of grilling. DH loved it and requests for it frequently.

Oven-Fried Pork Chops

My husband loved it and complained that I didn't make enough! I used buttermilk instead of milk and used the only stuffing mix I could find in my country, which smelled great but I had trouble getting the bread crumbs/croutons in the mix to stick to the pork. We also love that it is pretty healthy with minimal fat used (I just coated the pan with butter instead of using the recipe's portion.) And this is just so EASY to make! Will definitely be a regular at our table.

Baked Sweet Potato Sticks

Even my husband who is not crazy about sweet potato took to this one... We love spice but didn't have paprika so used a Cajun seasoning which I used liberally. I probably cut the sweet potatoes a little too thin so will do the wedges next time but everyone in my family loves this at dinner and as a grazing snack!

Roast Chicken Pita Pockets

I made a low fat version of this by using fat free yoghurt and fat free sour cream instead of the mayo - it turned out great. Very creamy and rich without the guilt. The rest of the dressing ingredients in the recipe were already full of flavor so we didn't miss the mayo. I also removed all the chicken skin (I know, all the fun bits!). I just eyeballed the whole recipe and it still turned out yummy! The creaminess of the dressing counters the relative dryness of the pita and chicken. I kept the veggies on the side (used leftover salad instead of shredded lettuce) until we were ready to eat. Hubby took the leftovers to work the next day (pita, chicken with dressing and veggies all packed separately to prevent sogginess). So quick and easy, I know this will be a regular at our table. Hubby already requested for this to be packed for his lunch regularly. :)

Quick Poached Salmon with Dill Mustard Sauce

Y'know, this recipe surprised me... We were caught at home on a Sunday night with no dinner plans and not much in the fridge other than salad... So I thawed out some Sutchi Fillets (catfish?), poached them as suggested (which was a lot less difficult than my hubby made it out to be), and whipped up the sauce using low fat sour cream and dried dill... And well, we enjoyed it more than we expected we would! The more we ate it, the more liked it... looks like we will end up repeating this recipe often (like when we're caught with not much in the fridge again... LOL)

Golden Sweet Cornbread

O this is my absolute FAVORITE! I tried other 5 star cornbread recipes from this site but I guess I like the sweet type... This reminded me of the Kenny Rogers Cornbread muffins but soooo much cheaper and waaaaay easy to make. I also like that this recipe uses less oil than the other ones I've tried. I tossed in 3 fresh chopped jalapenos and loved it... but next time, I'm upping the ante to 5 jalapenos per batch - I like my food with a 5 alarm fire rating... My SIL also tried other recipes from this site but when she tried this one, she immediately asked me for it! Says everything! Update: To increase our family's fibre intake, I used 1/2 cup white flour, 1/2 cup whole wheat and threw in a tablespoon of flaxseed meal... Came out smelling divine and was just perfect!

Light 'n' Creamy Mashed Potatoes

My husband went NUTS over this recipe. He's on a diet so we try to go light on everything... and man, this recipe just hit the spot! Only trouble is, he loved it so much he almost ate the whole batch! So much for the diet, huh? LOL.

Peanut Butter Noodles

This is awesome! I made it tonight and although I made so many mistakes (read on) it was fabulous! Even my 2 year old polished off two toddler servings! I seasoned chicken strips in soy sauce and sesame oil, cut them up, then poached it in chicken broth. Then I removed the meat and set it aside. I used the broth to make the peanut sauce. We have a great ginger and garlic chilli sauce that we can get here in Singapore so I added that and it gave a real nice flavor to the sauce (but we do like our food spicy as possible). If you want a similar effect, I believe US folks can get a Vietnamese Siracha Chilli sauce from most Asian markets/grocery stores... But I ended up making the sauce too runny because I used too much chicken broth... and the sauce ended up too salty because the chilli sauce is salty and I also threw in some fish sauce which my husband loves... so I had to save it somehow... So I ended up watering it with water, then thickened it with cornstarch and let the sauce simmer a bit and it actually worked out alright! O yes, last note: I used a silky egg noodle (sometimes called Shanghai noodle) which has a little bite but is also super silky and complements the robust sauce nicely.

Fantastic Black Bean Chili

This is good... I thought it was going to be too much (3 cans of black beans!?) but I have barely 2 cups leftover! I eyeballed the spices and upped the cumin, i used chicken cuz we don't have turkey readily available here in Singapore. My American husband and brother loved it, and ate waaay too much. Reminded us of our Tex-Mex days. Served it with "Golden Sweet Cornbread". A hit.

Pico de Gallo Chicken Quesadillas

Every loved it and over ate. I had a spatula/turner that had an extra wide head so that enabled me to flip the tortilla with relative ease (still needed some practice tho). This one will be a regular at my table.

Terrific! I make this ALL the time! I do have some trouble getting the patties to form properly but the taste is delish! My MIL in particular LOVES this recipe... For those who can take spice, throw in shredded red chillies... mm mm mm!

Tomato Chicken Parmesan

I've never had Chicken Parmesan but it is my husband's favorite. So I tried it. Its good. He likes it. Easy to make. I also made it "light" by using mozzarella and baked the chicken before adding it to the pasta sauce. I also added more spices to the store-bought sauce... Looks like its found a spot on my menu.

Mediterranean Quinoa Salad

My husband absolutely LOVES this recipe! I didn't use all of the oil and balsamic because the lemon seemed like it was a LOT. I also used Inca Red Quinoa, not sure how different it is from regular. He says he has been craving these flavors which he can't find in restaurants here. So I've been ordered to ensure that there is always a portion of this in the fridge (I served it cold with roast chicken) Delish!

Terry's Favorite Easy Chicken Pie

I followed the recipe exactly but used fresh carrots, potatoes and celery which I precooked. The taste of the pie was overwhelmed by the cream of chicken soup. Won't be making this again.

Fluffy Pancakes

These pancakes were awesome! Soooo fluffy... my son ate more than usual so it is a winner for me! I had buttermilk on hand so used that instead of milk and vinegar. I also added some rolled oats which I had pulverised in a blender for extra fiber and it was still great!
