Lemon Cooler Cream Cake

Lap Salad

Love this salad! A few hints: Try toasting the almonds for a better flavor. Instead of using salt, use the seasoning packet that comes with the Ramen. Add chopped cilantro and green onion. Use a splash of sesame oil for an added "asian" taste.

Garlic Chicken

Great recipe! The chicken stayed very moist - even after a fews days and heating in the microwave. I doubled the garlic as well as the parmesan. Added some black pepper as well as crushed red pepper for a little kick. Used half breasts and half boneless/skinless thighs. Thighs were even juicier. Husband loved it.

American Lasagna

Made this over the weekend for a group of friends. They LOVED it. I was a little skeptical when I was putting it together, since the ricotta mixture was a little runny, but it baked perfectly! I added alot more garlic and herbs to the sauce. Next time, I'll make more sauce for preference. Yummy flavors!

Classic Spanish Sangria

Made this over the weekend as well. It was just "o.k." - nothing too spectacular. I let it sit overnight after reading some suggestions, but felt that it was too thick to drink. Maybe will use some sort of carbonated orange soda next time.

Minty Orzo Lentil and Feta Salad

made this for a baby shower over the weekend. tasted good, but was alot of work - boiling, chopping, etc. and i agree with a previous post, that it was somewhat of an expensive pasta salad with kalamata olives, feta cheese, etc. undecided about making this again.

Moussaka

Made this last night - it tasted awesome - almost as good as in Greece! I would like to make these suggestions: -Soak the eggplant in salt water for about an hour to get rid of the bitter taste. -I microwaved the eggplant until soft to reduce the fat, then drained them on paper towels. ENJOY! This was very good!

Zucchini Bread III

Made a double batch last night. It was actually alot! Came out to be 24 muffins, 1.5 loaves and 24 mini muffins! Was very moist, but was a little "too healthy" for what I was looking for. I would not recommend doing mini muffins since you can't get all the nuts/raisins in each of those little muffins! tasty though.

Taste was good. I omitted the water with the apples like others suggested, but thought it was a little too dry. It tasted perfect with ice cream, but I will add 1/4c water next time.

Cheddar Beef Enchiladas

very tasty!! made this last night - and all the ingredients were in my pantry! very easy, but time consuming if you don't have rice already cooked. i added some sliced olives and they were great. recipe made a lot, enough for dinner, lunch, and more!

Dad's Pad Thai

Pretty good recipe. Added 2Tbsp of peanut butter to thicken the sauce a little. Also, would cook the eggs separately next time, and add toward the end so they don't get too mushy.

Split Pea and Ham Soup I

Great recipe and easy!! I did not use the ham bone, but 1 lb of leftover honey-baked ham i had in the freezer. Soup was very tasty!! I did add chopped carrots and celery - this made for a better consistency.
