Easy Tilapia with Wine and Tomatoes

Reviewed: May 13, 2015
We really loved this tilapia recipe. Reading all the other reviews about the fish being bland, I used extra garlic, pinot grigio, and I added Tony Chachere seasoning to each filet (could use Emerils seasoning, too). I baked it in the oven in a foil pouch. Delicious!

Mouth-Watering Stuffed Mushrooms

Reviewed: Mar. 24, 2015
These mushrooms are really good when you follow the original recipe. For my family, I made a few changes on my second time making them, since I really don't care for parmesan cheese. I added chopped green onions, Italian style bread crumbs, butter and shredded mozzarella cheese instead. I did not use the mushrooms stems, as it seemed like a step I didn't really need to do. Also, topped with more mozzarella cheese and baked them in about ½-¾ cup white wine.

Best Spinach Dip Ever

Reviewed: Jan. 28, 2015
I love this spinach dip, but prefer it with the Vegetable Soup mix. I also add ½ to 1 teaspoon of cayenne pepper for a little kick. I leave the water chestnuts out and use Wheat Thins to dip it. Yum.

Chicken Crunch

Reviewed: Mar. 9, 2014
Very easy comfort food. I added a jar of sliced mushrooms. Also, I put the crackers in a ziplock bag, and crushed them up, then poured melted butter in the bag, and mixed the butter into the crackers. No mess.

Oregon Salmon Patties

Reviewed: Oct. 16, 2013
I used seasoned bread crumbs instead of crackers. Delicious. I use the Chicken of the Sea pink salmon, that comes in a pouch. No bones or skin! Easy, easy!

Hot Bean Dip

Reviewed: Aug. 31, 2013
Great recipe. I made some changes ... I added a can of drained Rotel tomatoes, and I used the entire package of taco seasoning mix. When dip is done, I add grated cheddar cheese and green onions on top.

Crispy Fish Fillets

Reviewed: May 14, 2013
I rated this a 4, because you really need to add a lot of seasoning to this. I used flounder, and floured the fish first. Also, I used half potato flakes and half panko. Overall, a really great recipe.

Spicy Chicken Breasts

Reviewed: Jan. 27, 2013
This rub recipe is Emeril's Essence (less the oregano in his). I like the hint of oregano. Makes great chicken or pork.

Dried Beef Cheese Ball

Reviewed: Oct. 26, 2011
This is a hit at all my get togethers. I leave out the MSG, and I too, rinse the beef before chopping it. Instead of making a "ball" out of it, I shape it into a small loaf. Serve with wheat thins, because they aren't very salty.

My family and I didn't care for this rice. Not enough spices/flavor.

Sausage Balls

Reviewed: Jan. 3, 2011
Mine took about 15-20 minutes to cook. I used Jimmy Dean "HOT" sausage for more flavor. They weren't really "HOT", but gave the sausage balls a lot more flavor.

Burrito Pie

Reviewed: Oct. 24, 2010
I doubled the tortillas, as per the reviews. They were still soggy. This recipe was time consuming, and wasn't enjoyed by my family. It's so much like a 7 layer dip, I'll stick with that from now on.

Chicken and Broccoli Braid

Reviewed: Sep. 8, 2010
I had a real hard time making this look "pretty". I guess the more you make it, the better you get at the presentation. If any one has tips / pics of how to lay the dough out and do the braiding, I would appreciate you posting it. Overall, this tastes good. We felt like it needed some kind of "kick" in the chicken mixture, so will play around with different spices to liven it up. I doubled the mayo, because it just looked too dry when I was mixing it all up.

Southwestern Egg Rolls

Reviewed: Mar. 16, 2010
These were really pretty good. I made them 3 different ways ... all baked, though ... I put some of the filling in flour tortillas, some in egg roll wrappers and some in phyllo (fillo) cups. Family didn't care for the ones in the tortillas, but the ones in wrappers and cups were devoured! Couldn't really taste the chicken, so I won't hesitate to make these without chicken if I don't have it on hand.

I used 16 ounces of spaghetti, and only half the cheese. I also sauteed onions, bell peppers and garlic in butter, and added that in ... terrific !

Party Pinwheels

I made this without the ranch dressing mix, and it was still awesome ! Wrapped each individually in plastic wrap, and refrigerated them for an hour, then cut into one inch strips. So easy and good !
