Veronica's Apple Pancakes

I usually fail miserably at making fluffy pancakes, but these turned out perfectly! I made them exactly as written except that I guesstimated the amount of butter (the butter in Kenya doesn't have measuring marks on it) and I chopped the apples instead of shredding them to give the pancake more texture, and I more than doubled the cinnamon. I also added a sprinkle of nutmeg. No syrup here, so I ate them plain. My husband loved them.

Chocolate Chess Pie II

Mmmm...delicious. I made this as a way to use up half a can of evaporated milk I had leftover from making the Honey Wheat Bread (also on this site)! It was super-simple and surprisingly sophisticated. I made a bunch of changes that I think helped a lot: -Cut sugar to 3/4 cup. -Used about 5 tablespoons of cocoa. -Used 3 eggs. -Substituted applesauce for butter (healthy, and you can't even tell)! -Added a few shakes of all-purpose flour to make sure it'd set (some of the previous comments scared me). -Added a handful of chocolate chips - love that melted and re-solidified flavor. -Didn't use a pie crust - that's right, I put it in a casserole dish (didn't want the extra pie crust calories) and it tasted great!. Next time, I'll make these in individual ramekins for a dinner party. They're SO easy. Even my husband, who is not a big chocolate person, raved about this - it tastes like a flourless chocolate cake or a chocolate mousse with some flour added.

Ninety Minute Cinnamon Rolls

Wow! The dough for these cinnamon rolls is PERFECT. Soft, lightly sweetened, easy to knead, fluffy. It was my first time working with bread dough/yeast and it was easy for a beginner. I knew I wanted to make them a bit more special, though, so I used the caramelized pecan topping from "Overnight Caramel Pecan Rolls" from this site, but other than that, I did not change a thing. One note, though: I put these in the oven at 375 F, hopped in the shower, and when I got out of the shower, I could already smell a hint of burning. I rushed to the kitchen and checked on the rolls and they were already done after 12 minutes! Next time, I'll either lower the baking temperature or just take them out early. Thank goodness they weren't actually burnt - these were delicious. Note - they did take me 2 hours to make (not counting baking time). I don't think that's all just because I'm slow!

Blueberry Breakfast Sauce

So easy, very tasty, and versatile. I used blueberries and a few leftover blackberries to make this...and plated it on the side of a blackberry buttermilk cake - my guests raved about it. Made the recipe exactly as is, but halved the portion size. Perfect.

Addictive Sweet Potato Burritos

Strange...very strange...but also, true to name, they are addictive. I only gave them a four because they are a bit of work for the end result, and because even though I sauteed the spices with the onions beforehand (as suggested by other reviewers), I still found them to be a bit bland. One piece of advice is to only add as much water to create the consistency you want. I also used black beans instead of kidney beans, and mashed everything up together.

Simple Garbanzos

I'm transitioning into becoming a vegetarian, and this recipe has convinced me that not only is being vegetarian healthy, it's delicous! I used 1/2 cup of peas and only 2 T. olive oil. I think adding chopped tomatoes in the summer would be lovely.

Maple Salmon

This was the first real meal I had ever cooked, and I paired it with sesame green beans and rice. I made it last-minute to celebrate Valentine's Day with my fiance, who is a food buff, and he LOVED it! It's simple enough for someone who's never cooked before (like me), yet very delicious - a sure winner :)!
