Onions Baked with Rosemary and Cream

Reviewed: Jan. 3, 2009
How can anything so simple be SO GOOD!! You hit a home run on this winner, MBATMT! The rave reviews of the majority say it all about the heavenly aroma and melt in your mouth taste of this onion dish. I made it first for Thanksgiving and a second time for Christmas this yr. - family loved them with both turkey and chicken. As others suggested, I covered the dish for the first 30 mins. of cooking to conserve the sauce - will increase the sauce next time as also suggested - no splattering problem, thus, no tray necessary. I used smaller (about 12) yellow onions about 2.5 - 3 in. in diameter and they were just great cooking for about 1.5 hrs. I believe that there may have been a typo error at the top of the recipe when it said cook time: 2 hrs.? Later in the recipe the cooking time adds up to 1 hr. and 30 min. max in step 3 with the cream being added in the last 1/2 hr. BRAVO TO THIS TASTE SENSATION!

Pineapple Sweet Potato Souffle

Reviewed: Nov. 27, 2009
We eat baked sweet potatoes (yams) year round at our house. How can anything so good for you taste so good! I baked this recipe tonight and wasn't disappointed! This was a 'delish dish' souffle . . . high fives cinnalady! My personal preference was butter instead of margarine - everything else was perfect. The pineapple topping was really good! Note: I believe there is a typo under Directions #2: It reads "3 eggs" for the souffle; I believe it should read 2 eggs as the Ingredients call for plus the 1 egg to mix with the pineapple topping. Is this correct cinnalady?

Best Brownies

Reviewed: Feb. 7, 2011
Thank you Angie for this super EASY, YUMMY. one pan (except for icing bowl) brownie recipe. As advised I HAND mixed ingredients - gently mixing the eggs before adding. Lowered the oven temp 25 degrees F using a metal pan and watched like a hawk cause oven temps vary! Cooked for 23 mins - probably will do 20 mins next time to make a little more fudgey. Used a bit more cocoa being a chooholic. As Angie recommended frost brownies while warm . . . .& DON'T be concerned if the frosting seems dry while mixing - keep on mixing, warm a little before icing & it turns out perfectly - FABULOUS!

Mom's Zucchini Bread

Reviewed: Jan. 2, 2010
Happy New Year 2010 everyone . . . & special thanks to V Monte for this melt in your mouth Zuchini Bread recipe - now I know why the RAVE reviews - well deserved!! This is now my favourite Zucchini Bread Recipe that I can add optional fruit when desired. Everything is just perfect as is. When people make too many changes I wonder why they cook a recipe! The only comments I will add are based on optional preferences (e.g. more cinnamon) and a few baking tips for others like me that are not overly experienced in the kitchen! I made 1 loaf (cooked: about 45 - 50 mins) & 5 big muffins (cooked: 25 - 30 mins) & baked on the MIDDLE oven rack & watched like a hawk so as not to overcook. Added tin foil loosely around the loaf pan edges in the last 15 mins. while the middle finished cooking. Don't worry if he dough seems very thick before the Zucchini When you add the Zucchini NOT drained as others suggested (I added 3 cups & about 8 oz. of crushed pineapple) . . . . . then the moisture kicks in perfecty & becomes very pourable. Mom and I just devoured two delectabe muffins with our coffee this afternoon. Dinner will have to wait!! Guess what we're having for breakfast LOL!! Next time I double the recipe.

Buttermilk Pancakes II

Reviewed: Jan. 3, 2009
Happy Easter 2013 everyone! This is the second review which will be highly recommended as before! Fluffy & scrumptious. Definitely don't over stir & leave lots of lumps. Easter gift enjoyed with Mom on our sundeck overlooking the ocean with coffee. Hard to believe how warm it is in Vancouver, BC. Thanks again, BURYGOLD. (N.B. Do be careful of too high temperature in frying pan & not too much grease or they darken too much on outside.)

Beat and Bake Orange Cake

Reviewed: Jul. 29, 2012
DELISH cake, Mening! Fresh squeezed oj gave superb flavour. Not necessary, but I did add a full tsp of orange zest a 1 tsp of orange extract to cake. Mom who is a superb Dessert baker loved it, too. Her helpful tip: always sift flour before you measure for cakes etc. Also, please watch the baking time as mine cooked under 35 mins. Thank you for a superb Orange Cake & Icing that melts in your mouth . . . so much so I couldn't stop eating it last night LOL. This one will be added to our family's recipe book!

Banana Crumb Muffins

Reviewed: Apr. 29, 2010
Scrumptious muffins, Lisa . . . not only the crumb topping but what's below is fluffy and flavorful! Made them this afternoon in a 6 jumbo muffin pan, for as treat for Mom and me: REALLY DELECTABLE! Thank you! Ratings well deserved. Because the following are personal favorite flavorings with us, I increased the cinnamon to 1 tsp in the topping & added 1 tsp of vanilla to the batter. I also used canola oil but love butter as your recipe calls for & will try next time. On a whim I through in 1/2 cup of crushed pineapple I had in the fridge which also worked nicely with the banana. Helpul hint: I always use ripened bananas in recipes to get the full flavor. This is going to be a repeat treat frequently!!!

Fluffy Whole Wheat Biscuits

Reviewed: Mar. 7, 2010
Thanks a bunch, fellow Canadian, Ruth Ann! These bisquits were easy to make and GOOD. I used the food processor to cut in the butter, but make sure it is cold. Also if the dough gets a little sticky I just flour my hands. Mae twice: once with garlic powder and the second with cinnamon. Fun to add flavouring as others have suggested. I've made them twice

Peach Berry Cobbler

Reviewed: Aug. 23, 2013
I doubled the recipe knowing how delish this Peach/Blueberry Cobbler was the first time! Thanks for wonderful recipe, Amy. As you suggested I used lots of cinnamon for the topping with brown sugar. Depending on how juicy your fruit is, as mine were from the Okanagan orchards - you might want to use more cornstarch. Ovens all vary in temperatures; mine was done in under 30 mins in a 3qt glass dish, so best to test a few minutes before cooking time. The aroma is scrumptious. A definite vanilla ice cream topper!

Caramel Shortbread Squares

Reviewed: Jan. 27, 2013
Absolutely delish, Julia! Thanks for this easy, decadent dessert that's perfect as is. I made sure to keep stirring as I boiled the scrumptious, thick, Caramel mixture or it would burn; then really whipped with a spoon as Julia instructed after it's off the burner. Also, please check oven time with Shortbread layer as mine was done before 20 mins; ovens vary. Did my Shortbread layer in the food processor & worked fine. The Milk Chocolate layer was REALLY a nice touch! This was a hit for Mom's Birthday treat: a keeper.

DELICIOUS!! Thank you Laura - very moist & full of flavour. The zucchini disappears. Bundt pan worked perfectly with this recipe - cooked for an hr but watch closely as oven's cook at different temperatures. (Threw in a ripe banana & that worked, too) Also made an fresh orange juice/lemon glaze but not necessary.
