Slow Cooker Thai Pork with Peppers

So yummy! My boyfriend asked me if i could start making it every week, and extra for leftovers for lunch! Cooked on low for 2 hours, and high for 2 more. I used a pork tenderloin, instead of pork chops. I omitted the 2 red peppers, as I didn't have any one hand. I added fresh broccoli, after about the first hour n a half. Served over brown rice with crushed peanuts and green onion! Spicy & savory! Mmmm! Will try next time with PB2(peanut flour), to slash the fat, even if it is a healthy one.

Eggplant Croquettes

Oh jeez! Didn't even measure anything, grated low fat cheddar, gruyere and parm, and its sooo yummy! My hubby says he hates eggplant, but i didn't tell him what it was--- and he loved it! Also, only cooked 4 at a time (burger size) in a TBSP of EVOO. New staple can't wait to make again!

Broiled Tilapia Parmesan

Zucchini in Sour Cream Sauce

Wow this turned into a great dinner! I used this recipe, but doubled the sauce. I also added 2 cut up chicken breasts and some parm! We ate this over capellini. My boyfriend loved it! ..and so did i!! I will be making this again soon for sure!

Baked Zucchini Chips

These are healthy, easy to make, and delicious dipped in ranch dressing or marinara sauce! I usually cut down on the parm. a little though to reduce the fat & cals! A great way to use up all that summer zucchini and yellow squash.

Cream Cheese Frosting II

Wonderful, easy recipe. I made this to top AR's No-Fuss Pumpkin Cake. I did cut down the cream cheese to one stick. Its the perfect about to frost a 9 x 13 cake! Will use to recipe on carrot cake next ! :)

Everyone loved this cake, including me!!! Simply delicious.. and SO EASY to make! I used AR's recipe : Cream Cheese Frosting II to top it off.. Amaaaazing!! You must try this one, you will be hooked!

Easy Mini Quiche

I followed the directions exactly... but honestly was totally unimpressed with the results. Not much flavor, and soggy after cooking 5 minutes longer then the directions indicated. I won't be making this recipe again.

Zucchini Pancakes

These are soooo yummy!!!!!! I only used 1/4 cup of parm. cheese to cut down on the fat, and they were still amazing..... I also did NOT use butter. Just Pam. We dipped them in reduced fat sour cream when they were done..... Boy these were amazing!!!!! I think I'm going to make them again tomorrow, this time with Yellow zucchini! You have to try this one, healthy and sooo delicious!!

Broiled Sweet and Tangy Tilapia

Okay this recipe is AMAZING! Simply delicious! We loved it so much I made it two nights in a row! I used NO butter, and it still turned out wonderful--and low fat (I'm on weight watchers). So far I've tried it on Tilapia and Salmon ... and can't wait to try it on chicken and shrimp! It's so easy to make, and just simply divine! Def. a new base recipe in my kitchen!!!!! A must try!!

I would advise lining the baking dish with foil, but other then that don't change a thing. This recipe is super! Its so yummy, mmm maple and salmon go perfect together!!

Award Winning Soft Chocolate Chip Cookies

These are my FAVORITE! Best cookies i've ever tasted I think! I first tried them a year ago, and haven't even bothered to try any new ones since, thats how good they are (and i bake cookies every week)! I try not to make them that much, because I can't help but eat one after another after... another! Sometimes i add M&M'S.. everyone seems to love them in the cookies. I took other reviewers advice and added the 1/2 t of salt 2 t baking powder and 2 T Vanilla. Really makes them fabulous!..and 12 minutes is the perfect amount of time, even if you don't think they are done they are! You must try this recipe, you will be hooked! Its all in the pudding!!

Classy Chicken

I thought this recipe was extremely yummy! I didn't have any sun dried tomatoes on hand though, so i just cut up a fresh tomato. I doubled the garlic, and used teas. of olive oil instead of butter, and cut down on the dill a little. The sour cream makes the chicken sooo tender. Yummmmmmm can't wait to try different alterations! Thanks so much for the recipe its going to be a weekly meal for me ! :)

The Best Rolled Sugar Cookies

So good! Turned out perfect and delicious, i couldn't stop eating them and i got nothing but compliments everyone thought they were SOOOOO good! I cheated and bought Fluffy white frosting at the store... tasted fantastic. Definitely will make again, soon!

Seafood Enchiladas

Super yummy!!! I doubled the sauce...... it curdled in the oven, i think i left it in too long (will watch way more carefully next time)-- but it still tasted amazing. Also used imitation crab meat because its all i had on had-- really good still.. Also did not have any colby cheese on hand so I used swiss and Monterey jack.. FANTASTIC. I will make again soon......watching more carefully in the oven! Try this recipe mmm!

Delicious Ham and Potato Soup

So Yummy!! I subtracted the celery but, added carrots and corn. I didn't have any chicken bullion on hand so i just used chicken broth and water. To make it creamier I substituted half of the amount of milk with light cream. I also added half a cup of shredded cheese to the cream sauce... Try this recipe so simple... and so delicious!!
