Slow Cooker Carnitas

this is awesome. I did triple spices. Omitted cinnamon and coriander. Thank you. Great way to cook pork steaks or roasts.

Wild Rice Waldorf

My husband and I enjoyed this salad. I used what I had on hand. Yogurt instead of sour cream. Forgot the lemon juice -oops. No green apples and only used 2 celery sticks and extra cup of wild rice. Omitted nuts. Including the other items would make this even better, and raisins or cranberries would probably be nice too. Refreshing.

Pig Pickin' Cake

Reminds me of the kind of cake my mom made for us as kids. Same ingredients, (except the mandarin) but less steps. Very tasty! Does make you keep coming back for more.

Delicious Gluten-Free Pancakes

I will try again. Maybe I will add more baking soda and /or powder. Mine didn't look as beautiful as the ones in the picture, but they were not bad at all. The batter was very runny (my husband likes that) and the pancakes didn't rise like I was hoping. Not bad though, especially if you have gluten intolerance. Oh, I didn't have buttermilk powder, so I made buttermilk with the milk by adding apple cider vinegar.

Beef Stew VI

I loved it of course cause it was all homemade!! **You can substitute arrowroot powder for cornstarch.** My husband liked it as did my older children and my 1 yr old. The meat was soo tender..oh by the way I used beef arm roast cut into cubes. I substituted arrowroot powder for cornstarch...For a thicker sauce, next time I will use 1 cup of arrowroot mixed in 1 cup of cold water. Make sure to completely mix in the arrowroot mixture in the broth. Play around with the amount of arrowroot. Maybe start out with 1/2 cup of arrowroot and water first ( that is what I used and I wished that I would have used double the amount of arrowroot.

Refreshing Spaghetti Squash and Cucumber Salad

Wasn't sure if this was one I was going to like at first. After reading all the reviews, I decided it was worth a shot...I had all the ingredients except the olives and lemon zest. It was great! I liked it as is...my husbant thought that it was good too, but thought that adding diced apple would encourage the kids to try it. (Spaghetti squash and cucumbers aren't always on the menu, but we were given these items and didn't want them to go to waste.) I would also suggest adding halved grapes would be good. great salad as is in my book. Very healthy and refreshing. Makes alot!

Pumpkin Cheesecake I

Quick. Easy. Just set out all the ingredients to thaw or soften well before you start...everything should go quick that way. Used the recipe on this site for pumpkin spice since I didn't have any...good stuff. Oh, and I halved the recipe and filled an 8x8 dish. Thanks

Slow Cooker Chicken Taco Soup

Did this on the stove in 1/2 hr. My husband and I liked it. My two older children liked it. The other littler ones did not. It is still good with some corn chips. I modified the recipe to use what I had, but the ingredients were all in there or close... I used 1 jar of salsa (mild) and no beer...just chicken broth that had just gotten done on the stove...added the spices as suggested by reviewer, packet of frozen corn, and beef and bean chili leftovers about 4 cups. Added some shredded chicken and mixed together. Heated through in a pot and Voila...dinner within 1/2 hr. Served with corn chips, sour cream and cheddar cheese. Very filling hearty meal. 8/27/11 Made again. Omitted beer, but all the other ingredients were added. Quick and tasty!

Playgroup Granola Bars

Great recipe. Used Flax seed instead of wheat germ, added a 1/3 cup of choc chips. Next time will add nuts...sesame seeds, sunflower. Very tasty...the edges were addictively crispy and the rest was perfectly chewy. I just wished I would have doubled the recipe. I think I came out with under 24 pieces, but probably because I cut them a little larger...2x2. These do get eaten quickly.

Garden Fresh Tomato Soup

Awesome recipe. I tripled the recipe (had lots of garden tomatoes) Sauteed the onions, then sauteed 3 cloves of garlic with onion. Added bay leaves to tomatoes and homemade broth. I used a hand blender and used a 2 strainers to get the pulp out of the soup. Added two pinches of ground thyme to roux. Added about 4 TBSP more of flour. I only enhanced the flavors of this recipe. Great base for me to mess with...Husband liked it. Older kids liked it. Thank you! thank you! Reminded me of soup served to me at a delicatessen in town...comforting, filling, healthy slow food...mmm. Serve with crusty or fresh baked buttered bread!

Kitchen Sink Soup

Excellent and simple. Kids helped with prep. Used alot of ingredients up... Didn't have / use broccoli, cauliflower, wax beans, parsnip, navy beans. Did have extra 3 potatoes, 2 banana peppers, yellow bell pepper instead of green, 2 cups of dried shittake mushrooms, 2 cups frozen chickpeas, 2 cups of frozen green peas, 1 lb. fresh green beans. Used homemade chicken stock. Very delicious! Salt and pepper to taste. Very good with biscuits.

Sensational Strawberry Shortcake

Delicious! Used Cool whip type of topping (healthier version from health food store--not hydrogenated) Also used Rapadura for sugar...except for the strawberries. Organic Strawberries are soo sweet that I only added 2 tsp of powdered sugar to the slices. Very good.

Barbecued Beef Liver

I really liked it. My family isn't big on liver, but the oldest kids ate it (4. 5, 6). It helped that strawberry shortcake was offered for dessert if all the dinner was eaten up. I could have eaten the whole liver dinner myself...I don't remember liking liver as much as I have these past few years...I am glad I found a different recipe besides liver and onions. I will make again. Thank you.

Savory Honey Mustard Pork Chops

This is a 5 star recipe...If this is not a five star for whatever reason, don't let it keep you from trying it. I don't usually use Dijon Mustard, but I opted to try this recipe. I am so glad that I did. I had 6- 1 inch thick pork loin chops that were defrosted. I followed the recipe except I baked them (I couldn't fit 6 on my skillet--I could fit 5 though). I also ran out of broth/stock...so I used Better Than Boullion Vegetable Base. I used the equivalent of 1.5 Tbs of the base to 2 cups of water. Would be great with chicken stock though. Instead of pouring the liquid in the skillet, I put the pork chops in a baking dish and poured liquid mixture over the chops. I baked this for 15 minutes at 350. I thought they were not ready since the gravy was so liquidy...but in reality they would have been the best taken out of the oven at that time. I let them bake for another 10 minutes at 375. They were so good-- a few bites were a bit dry, but that was my fault...overall, they were still tender and great flavor. I also added more honey A five star recipe that is fast, and delicious! I served with roasted brussel sprouts and couscous. Thank you for sharing. This is a keeper recipe! Had 3 of the pork chops leftover with some of the gravy...very filling. I would bake this for 15 minutes at 350 next time. Or I will defrost only 4 chops so that I can follow the exact recipe...I know it will be good either way.

Spring Salad with Fennel and Orange

What a great flavor fennel has! This is a great combination of flavors for something different and refreshing. Sweet, citrus, licorice-hint taste- not overwhelming, just right. Quick recipe. Oh--I did use green onion instead of red onion (out). Milder perhaps than red onion...I think the vinegar would tone down the red onions strong flavor...and blend in very well too. Thank you for this colorful and creative recipe. For a meal...add grilled chicken.

Pork Steak Burritos

Thank you! I had defrosted some cubed pork steaks (like cubed beef steaks) and wanted to try something fast. I saw this and thought it was simple enough and sounded delicious. I am glad I tried it. It will be a regular when I have pork steak (cubed or not).
