Crustless Spinach Quiche
This was great! I usu use a diff recipe (w/ a crust) from All-recipes however I am looking to cut carbs! I doubled recipe & put into a 9X13 as suggested from another. This amount was right for my family of 5 (3 teenage athletic girls). I had fresh spinach & added 3-4 c lightly chopped (the amount the recipe called for seemed too much), 2 T sundried tomato, and some seasoned turkey sausage + onion. I used egg beaters bc I was curious if it would taste different, and was surprised this tasted so good! Thumbs up by everyone - husband didn't like sausage.

Chicken and Spinach Alfredo Lasagna
Very good! I subbed the heavy cream and cr of mush soup w/ two jars of alfredo sauce (I didn't have h. cream). Added as advised by others: chopped sundried tomato, extra mushrooms (1~ 8oz package chopped) and extra seasonings. Plus I used up whole 16 oz container of Ricotta (didn't want to waste it!). Also, I wilted fresh spinach in w/ sauteed mushroom/sundried tomatos/onion/garlic mixture (I didn't cook spinach through). I mixed this + chicken all together as a layer rather than spinach being seperate. I also divided this so there would be 3 layers. Rave reviews by all - young and old at Christmas Eve dinner!!!

Mouse's Macaroni and Cheese
fabulous! Not a big mac and cheese fan but made on a cold night recently. I added extra cheese - some swiss and a very little amount of cheddar (only bc it melts grainy) and subbed 1/2 evap milk + 1/2 skim milk for amount of milk and added dash of worchester for depth - plus I added crumbled bacon as garnish on the top before cooking... changes were recommended by others - glad I tried them - verrrry good! * I didn't use velveeta b/c I can't stand the thought of it - I used 16 oz of white amer cheese.
