Dad's Leftover Turkey Pot Pie

This recipe is just perfect for leftover turkey and veggies! The flavors are right on and the crust is a wonderful compliment to the filling. No leftovers here!

Eggplant Bake

I am always looking for creative eggplant recipes that don't include frying in a lot of oil. Even though fried eggplant is delicious, I just can't justify all those calories! I had feta cheese in the fridge and decided to try this recipe and I'm glad I did! I sweated the eggplant for about 20 minutes with salt before beginning the recipe, and I didn't have any muenster cheese so I used fresh mozzarella and I sprinkled fresh basil on top. Everything else was per the recipe. This is so good that I will be making it as my primary eggplant recipe. It really brings out the flavor of the eggplant without that heavy oily taste. The onions, tomatoes and cheese are perfect flavorful compliments. So glad I came upon this recipe, thank you!

Brie Cheese Appetizer

Who would have thought how good this would be?? Messy to cut into but it didn't matter!! My family was scooping up all the overflow with a spoon. I'm not a brie lover and think I might like this better with a different type of cheese, but when I brought that up my entire family screamed out, "NO!" So there you have it. It's perfect as it is!

Chicken with Lemon Sauce

My 13 year old daughter (quite a good cook) made this chicken dish tonight and it was awesome!! We didn't have any parmesan cheese but she added a bit more salt to the flour mix to compensate. Also didn't have apple juice, so she used a combination of marsala wine, chicken broth and a touch of brown sugar (for the sweetness) in its place. Wow!! What a great flavor and the chicken was cooked perfectly! My husband actually said he would order this in a restaurant, and that is quite a compliment from hm! My daughter doubled up on the sauce and made roasted potatoes and glazed carrots to complete the meal. So good!!

Orange Vinaigrette Dressing

This dressing is a nice alternative to the raspberry vinaigrettes I have had in the past. Tastes extremely fresh, slightly sweet and orangy with a little kick from the Cayenne pepper. It was a perfect topping for the salad greens I served with a Chicken Cordon Bleu dish and balsamic glazed asparagus. My husband asked to have this dressing on a regular basis... quite a compliment! Thanks for sharing!

French Onion Soup V

My daughter and I decided to present "French Night" to the family as a special summer dinner and chose your recipe as the soup course. Wow! My two sons and husband couldn't stop saying how good it was! The only change we made was to leave out the sugar, and that was by mistake! The soup was so good (even without the sugar); absolutely better than any we've had in a restaurant. We cut up the bread into pieces (like croutons) and smothered them with the mozzarella cheese. Soooooo... yummy! And so easy..... Thank you!

Filet Mignon with Rich Balsamic Glaze

I was looking for a nice filet mignon recipe to serve my husband that was not plain and ordinary. This recipe was perfect! Quick, tasty, and different! I added garlic (only because garlic makes everything better, right?) and a little brown sugar to cut the acidity. The sauce was so tasty I added some to the sauteed mushrooms and onions I made as a side dish. Awesome!

Rainbow Cookies

Absolutely delicious! My 13 year old daughter has made these twice, and each time they were perfect! She had one addition to the batter - 1 tbsp of almond extract and we did add 2 tbsp butter and 1/4 cup heavy cream to the chocolate as others suggested to play it safe. No cracking occurred when cutting and the consistancy of the cookies was on the money. What a great recipe, thank you Penny!
