Roasted Asparagus with Parmesan

Fast and easy to make. I didn't measure anything. Just used my own judgement with the garlic powder, salt and Parmesean cheese. It turned out great. Wouldn't hesitate to serve this to company.

Blue Cheese and Dried Cranberry Tossed Salad

I made this for our family Christmas dinner. The only thing that I omitted was the cucumber - I didn't see how that would enhance the flavor of the salad with the blue cheese and toasted pecans. I used Paul Newman's Light Cranberry Walnut dressing. I think next time I would use a balsamic vinaigrette instead and add a little purple/red onion for a little more kick. Will definately make a again as it was a beautiful salad for the holiday! Thanks for the recipe!

Won Ton Wrapper Appetizers

This is my husband's absolute favorite appetizer. I can't go to a party without making these - and they always get rave reviews (especially from the pickier men). The recipe I have been using all of these years is a little different. It calls for SHARP cheddar cheese in addition to the Monterey Jack and also adds chopped red pepper. Sometimes I cut down the amount of ranch dressing. The filling mixture does freeze well, so you can make ahead then thaw and bake when needed.

Garlic Chicken Stir Fry

Full of flavor! I used 4 cups of Yin Yang vegetable blend from Market Day in place of the cabbage, red bell pepper and sugar snap peas. Otherwise, I followed the recipe exactly. Will make again and again.

Southwest Chicken Salad I

Tasty! I made the salad dressing the night before. Increased the amount by half so I could marinate the chicken breast tenders overnight before grilling them on the stove in a grill pan. To give the dressing a little more kick, I cut the chili powder in half and added chipolte pepper . Added some corn leftover from corn on the cob and left out the chips and Parmesan b/c I didn't think the salad needed it. All of my guests loved it!

Light Chicken Piccata

My husband and kids thought that there was too much lemon flavor - and I only used 1/4 cup of lemon juice vs. the 1/2 listed in the ingredients list. I thought it was good though!

Fish in Foil

I love to hear "You can make this again, Mom"! That is what my 14 year old said. I don't hear that often. Made it with Tilapia and also had some Hake (like Cod) left in the freezer. It was great with both kinds of fish. This is a keeper!

Turkey Wild Rice Soup

I just made this using some leftover turkey breast. This soup had great flavor and was easy to make. I prefer my soup a little more meaty, so I doubled the amount of turkey - since I had it anyway. I also added some carrot that I had in the freezer. If I make this again, I would try adding a little more rice as well. Omitted the bacon. I think the soup is fine without it!

Simple Sicilian Salad Dressing

I agree with those that said it needed a pinch of sugar and some garlic. I used garlic powder this time but will mash up fresh garlic next time. This is a keeper!

Italian Sausage and Peppers with Penne

I've made this recipe twice now (with two variations) and we liked it both times. The first time I used green pepper and all sausage, adding garlic powder and red pepper flakes to the recipe. This week, I used a red pepper instead of green (which I preferred) and since I didn't have enough sausage, I improvised with some lean ground beef. It was great either way. I think the garlic powder and red pepper flakes give it some kick. (Note: I used Target's Market Pantry traditional mariniara sauce b/c it was on sale for $.77! It was just as good as the Name Brand.)

Slow Cooker Baby Back Ribs

Have made this 2x now. This is a keeper. Nice to have ribs all year around! I am going to use this method to pre-cook my ribs in the summer before grilling. The meat falls right off the bones and I love how lots of the fat cooks off in the crockpot!

Left-Over Turkey Pot Pie

Great flavor! This was a wonderful recipe for using leftover turkey breast. I had various frozen veggies (carrots, corn and green beans) that I threw in along with some potato. As others suggested, I boiled the potato prior to cutting it up into pieces.

Tortilla Rollups IV

I made these to take to a party last night and they were devoured quickly. I added a couple of things based on other reviews. Added 1/2 package of Hidden Valley Ranch mix and a little taco seasoning as well (did not measure). I also added 3 chopped green onions. I served with some salsa for optional dipping, but they were good all by themselves. Will make again for sure!

Pesto Sauce

Very good basic pesto recipe! I cut the salt down after reading other reviews. Tossed with pasta and added sun dried tomatoes as another reviewer suggested. Thanks for the recipe! I'm going to try it with sunflower kernels next time to see how that tastes.

Smothered Beef Short Ribs

After having "melt in your mouth" beef short ribs at a restaurant, I thought I'd try making some for my family. I can't fault the recipe, but I was so bummed that after all of the effort and time spent, there was not much flavor to what little meat I could get from the ribs. (I think I bought quality meat - from a local specialty market). Mine was mostly fat or fatty meat. The aroma coming from the stovetop was wonderful, but unfortunately, the meal was not. I might try this same recipe with a pot roast and put in my slow cooker.

Chicken or Turkey Tetrazzini

Scaled down the recipe for 4 servings. Added 1T of cooking sherry to the sauce and since I had sliced American cheese singles on hand, I cutup 8 slices, adding ALL of the cheese to the sauce mixture. As others recommended, I topped with bread crumbs and parm. cheese during the last 10 minutes of baking. Although my family didn't care for it (they aren't all that into casseroles :( ), I thought it was tasty! Good comfort food!

Easy Lemon Cookies

Could use a little more lemon flavor. I added a little lemon zest but next time would increase the lemon flavoring and add even more lemon zest. Otherwise, simple to make!

Onion Pan-Fried Pork Chops

This was so easy. I had a 1/2 package of soup mix left from awhile ago, so I decided to use that along with panko bread crumbs. I used about 1/2 -3/4 cup of bread crumbs. It was tasty and not too oniony. I let the breaded chops sit in the refrigerator for 15 minutes to help keep the breading on the chops while frying.
