Frijoles de Olla

This is the only way that pinto beans should be cooked. This recipe appears to be identical to the one my family uses (in their head). In place of lard, we usually use cubed pieces of salt pork, but have also used bacon in a pinch (or vegetable shortening if cooking for our vegetarian friends). Some brands of dry pinto beans contain bits of dirt and such that you will want to make sure don't end up on your dinner plate. To clean, just pour them onto your countertop and make sure that only beans go into your colander. Give them a quick rinse and then pour them into your pot. (My mother also taught me to remove the ones that floated to the top at this point, but she never really gave me a good reason for doing so. And so I still do it.) Also, be sure to check on them periodically to ensure they aren’t running short on water and/or secretly beginning to stick to the bottom of your pan. Leftovers freeze well, but they are also excellent in breakfast tacos. Try mixing a bit in with your scrambled eggs. Or make refried beans with chorizo--and don’t forget to sprinkle some grated cheddar cheese into your taco! :)

Downeast Maine Pumpkin Bread

Having tried all the other super-star pumpkin muffin recipes on this site and found them either too dry or worse, too sticky, I decided to modify this recipe ever-so-slightly and I am pleased to announce that my search is over! I added about 3/4 C chopped chocolate chips and sprinkled the tops of the muffins with coarse sugar. This recipe yielded 14 extra-large muffins and 12 mini muffins, all of which freeze well too! UPDATE: Try adding cinnamon chips in place of the chocolate chips for extra yum. :)

Simple BBQ Ribs

Excellent! Boiling the ribs before baking them? Yes, I certainly had my doubts, but you made me and a believer. At dinner tonight, when I told my family that I'd be happy to make another batch in the near future if my husband bought more ribs on his next trip to the grocery store, he told us that he'd have to think about it because doing so would mean that he would have to listen to us go on and on about how much better these ribs were than his own. So thanks for sharing!

Award Winning Soft Chocolate Chip Cookies

I've baked these probably 20 times over the past years. I have strayed a couple of times but I have always regretted having done so after the fact. Also, I now only make these cookies with Guittard milk chocolate chips. And so should you. And whatever you do, do not use those chocolate-caramel swirl chips or you'll be tempted to give them all away at the office like I did. ;)

Excellent recipe, and easy to customize. You'll never want to OR NEED TO make lasagna again. Layer cooked ingredients into your crock pot first thing in the AM for an office potluck dish. :)

The kids like them. Good way to use up leftover cereal that everyone has apparently decided they no longer like. I've made them with Cheerios and regular crispy rice cereal. And I use up to 10 cups of cereal if I have it on hand. Line your pan with parchment paper (not wax paper as it will stick to the bottom of the bars) and there's no need to place them in the fridge to solidify. Cookie cutters work on the crispy rice version. Be sure to store them in a air-tight container or they will get tough. Not that that will keep them from being eaten. :)
