About this Cook
I'm a teacher for students with special needs and love to find recipes on here for school and home.
My favorite things to cook
I am a really great baker and good cook. I'm always looking for new recipes and thinking of new ways to "jazz" them up and cut out fat at the same time.
My cooking tragedies
Rice. But now I have a rice cooker!

Sugar Cookie Icing
Followed the recipe as stated but needed toad just a little it more milk in order to create the right consistency. Excellent. The cookies turned out awesome. I used a paint brush and painted my egg cookies. The possibilities are endless. Will be using this icing recipe. Simple, quick and tasty. Not too sweet. Thanks!

I thought this was a nice foundation to picadillo but made some minor adjustments. First off, I scaled it back to a serving of 4. Once I saw the new measurements, I scaled back the cinnamon and cloves to 1/8 of a tsp. instead of the 1/4 tsp it called for. I knew it would be too much due to their overwhelming flavor. I left out the olives and capers mainly because I didn't have any on hand. I added some pure annatto seed, ground, about 1/4 tsp, and 1/4 tsp of Mexican oregano, and cumin. I scaled back the tomato sauce to 1 1/2 cups and added a half cup of beer. Beer is very typical in chicken and yellow rice so why not in picadillo. I served it over white rice and thought it turned out pretty good.

Ninety Minute Cinnamon Rolls
I made these cinnamon rolls just a few days ago and got rave reviews. I doubled the recipe and was very pleased with the outcome. I added a pinch or two of kosher salt to the cinnamon and brown sugar mixture to really bring out the sweetness, and to create a bit of a salty sweet combination. And kosher salt has bigger granules to give you that salty sweet taste. For a topping I made a brown sugar glaze: 1 cup of brown sugar and butter, 1 tbsp of vanilla extract and another nice pinch of kosher salt. Bring this up to a simmer in a small saucepan at medium heat. Once melded together nicely, take off the heat and add 1 heaping cup of powdered sugar and whisk together until you achieve the glaze consistency you desire. Again, when you take a bite you may meet a bit of the kosher salt in both the center of the cinnamon roll and glaze which really makes this cinnamon roll pop.
