Beef Barley Vegetable Soup

This was quite tasty, but I made a variety of changes. I threw everything but the barley in the crockpot and cooked it on high for 4.5 hours, then added the barley and cooked for another 30 minutes. I used stew meat, diced tomatoes, beef broth, and added worcestershire sauce/oregano/garlic. I left out the onion/carrots because it was already very thick after adding the mixed veggies and celery... next time, I'll add the onion but will reduce the amount of veggies. I doubled the barley. Very quick and easy, but super yummy. Will make it again!

Fresh Fruit Cobbler

I used the fruit i had on hand that was about to turn, so it ended up being a mix of peaches, plums, cherries, and blueberries. I added a bit of cinnamon and sugar to the fruit mixture, and 1 tsp of cinnamon to the top as well. Absolutely delicious served with vanilla ice cream. A great way to use up leftover fruit.

Health Nut Blueberry Muffins

I doubled the recipe and added 2 tsp of cinnamon, 1 tsp of nutmeg, and a pinch of cloves. I also subbed the buttermilk for regular milk since I rarely have buttermilk on hand. Added in 1/2 a cup of flax seed. With those changes, this was a tasty recipe. My kids loved them.

Whole Grain Waffles

These are delicious! I used all whole wheat flour and 1/2 c of oil since I didn't have applesauce and my kids loved them, and said they are the best waffles I've ever made!

Whole Grain Pancakes

These were just okay. I didn't have a problem with the batter being too thin, but they didn't have a lot of flavor. I added 3 tbsp of wheat germ, 1 tbsp of vanilla (my daughters like very vanilla pancakes), and 1 cup of blueberries. I think that I'll keep looking for the perfect whole grain pancake recipe.... especially since I don't love the corn meal in this one.

Cranberry Pumpkin Muffins

I've tried a lot of pumpkin muffin recipes (from this site and others) and this one was definitely the best. Moist, just the right amount of spices, and very delicious. I only made two changes. One is to add 1 cup of chocolate chips along with the cranberries (nuts would also be nice). If you don't do this, you might want to double the cranberries. The second is to only bake at 350 for 20-25 minutes. 400 is just too hot for muffins, I think. They came out perfect at 350.

Grandmother's Buttermilk Cornbread

I've been making this recipe for about a year now and it's always absolutely perfect. It rises well (can be an issue with cornbread), is moist and light, and has that hint of sweetness that I LOVE! I just made another batch for dinner along with some honey butter, and it's hard to get better than that. I do not make any modifications to this recipe, and this may be the one and only recipe for which that is true since I love to tinker. It's divine and SO easy!

Italian Bow Tie Supper

I changed this recipe substantially, so it's hard to really give it a rating. However, the way that I made it was really delicious. Used italian sausage instead of ground beef (the one I used was one mixed with wine, cheese, and garlic), doubled the tomato sauce and stewed tomatoes (and used crushed tomatoes), added in half a bottle of roasted garlic spaghetti sauce, used fontina cheese instead of mozzarella, and a mix of bell peppers instead of spinach (and put the peppers in from the beginning). I let this cook on low for about 20 minutes after adding in very al dente pasta and it was REALLY good. Made enough for 8 people since the 4 of us only ate half!

To Die For Blueberry Muffins

I did not make the crumb topping so perhaps that would have changed my opinion, but otherwise I made these as written and they had a pretty gross oil flavor. It wasn't strong, but strong enough for me to notice. I think that, in the future, I will stick with muffin recipes made with butter. These also were not very sweet at all, despite the fact that I dusted them with turbanado sugar before baking. That might be by design because of the topping, though.

Banana Muffins II

These just plain weren't that good. I added in chocolate chips for my kids and used VERY ripe bananas and added vanilla and they were still just a bit bland. My kids liked them, though.

Tex-Mex Beef and Cheese Enchiladas

I only had 1 pound of ground beef, so I used a can of kidney beans and a can of corn to help make up some of the bulk of the meat. It is a great consistency and I think it would be a little too thick if we'd used a full 2 pounds of beef. I used 16 oz of tomato sauce rather than 8 oz, and only 2 cups of water and it's still a little bland. Next time, I'd use 24 oz of tomato sauce and only 1 cup of water. I also added a small onion and 4 cloves of garlic to the beef mixture. Otherwise, followed the recipe as written and the spices are just right for my kids and a little less spicy than I'd like. My only real issue with this recipe is the lack of flavor to the sauce. The spice is there, but the flavor seems diluted by all of that water.

This is delicious and so easy it's unreal. I didn't have any lemon zest, so I used 1.5 tsp of lemon extract. It came out perfect!
