Coconut Poke Cake

Wow, what a great dessert! I used Devils Food instead of white cake, and added 1/2 tsp. coconut extract to the batter. I also heated up the condensed milk and coconut cream slightly so the sauce would be thinner while pouring over the cake. Poked holes using a wooden spoon handle ... the sauce absorbed right in. The cake came out light and fluffy, not soggy like I thought it would. Fabulous taste ... hubby ate 2 big pieces as soon as I finished sprinkling the coconut! Thanks for the recipe - this will definitely become a family favorite!

Country Style Fried Potatoes

These are terrific! My family devoured the entire pan tonight at dinner. The only changes I made were bacon fat instead of shortening, and I added 1/2 tsp. onion powder to the spice mix. Really fantastic flavor, color and texture.

Old Fashioned Apple Cream Pie

I made this recipe tonight, but I wasn't really in the mood for anything lemony or apricot-y, so I fiddled with the ingredients a bit and OMG it turned out sooooo awesome! I used the pre-baked pie shell, and made the cream cheese filling, but I omitted the lemon rind and added 1 tsp. of maple extract to the filling. Next, I sauteed the apples as in the recipe, but I omitted the lemon juice and added 1 tsp. cinnamon instead. I also omitted the preserves and made a baked streusel topping that I sprinkled on top of the apples. Everyone loved it, even my extra-picky son!! I'm running long here, so I'm going to write down exactly what I did, including the streusel topping recipe, and post it to this website under the heading "Maple Crunch Cream Pie". Thanks for the great recipe, Karen!!

Gooey Butter Cake I

This is a really great recipe - fast and delicious. I made the cake yesterday afternoon and there's only one teeny slice left, and the only reason *that's* still here is because my 12 yr old son made me promise to keep the last piece away from his father! A very nice recipe indeed

Banana Sour Cream Bread

Great recipe! I made it yesterday with bananas and sour cream. Today I made it with 3 cups of pureed sweet potatoes in place of the bananas, buttermilk in place of the sour cream, and 1/2 tsp. ginger, 1/4 tsp. cloves and 1/8 tsp. nutmeg in addition to the cinnamon. Sprinkled cinnamon sugar on top before baking. I got 10 mini loaves out of each recipe and they came out terrific!!

Cottage Cheese Chicken Enchiladas

Excellent recipe! I substituted 4 cups of leftover shredded pork from a roast the night before and it tasted fabulous! Also, I baked the enchiladas on a bed of spanish rice mixed with mexican corn (gandules next time!)and the rice kept the enchiladas from getting soggy. Plus the rice absorbed the extra sauce and made a great side dish! Thanks Crystal!

Apple Dumpling Cake

Excellent cake! My husband loved it - said it's a cross between a pie and a cake. I used a combination of Mutsu and Macintosh apples. Also sprinkled a mixture of 2 Tbsp. sugar and 1 tsp. cinnamon over the top before baking. Very tasty - I'll be making this often.

Cream Peas

I made this recipe for Christmas Day and it was wonderful - so easy to make! I made it about 2 hours before dinner and then reheated it on the stove with a couple of tablespoons extra cream mixed in. I also added 1/2 tsp. onion powder and it really gave the sauce a pleasant zing. This recipe was a nice compliment to our holiday ham.

Broccoli Chicken Fettuccini Alfredo

My family loved this recipe, especially my 12 yr old son. I doubled the recipe, used 1 can cream of mushroom and 1 can cream of chicken. I also substituted cauliflower for the broccoli and ziti for the fettuccine to save a trip to the store. It was very tasty!
