I had these once when a coworker made them and was happy to come across this recipe when I was looking for a way to use up a box of cereal. For the chips, I used heaping 1/2 cups and just melted them in the microwave for 1 minute. Thanks for an easy treat!

Mexican Sour Cream Rice

I was skeptical about this one because the reviews are pretty mixed. Overall I thought it was good. Nothing extraordinary, but easy and a nice change from traditional spanish rice. I only used about 3/4 cup of rice and only about 2 tablespoons of cilantro, but kept everything else the same. I still got 6 large servings out of it. I served this with shredded chicken chimichangas and refried beans. I have added it to my recipes and will make again. Thanks!

Chilie Pork Tacos

I picked this out because of the low calories per serving. I followed others' suggestions and cut the vinegar in half. Also, I drained the fat from the pork before adding the beans to cut back on the greasy factor. I would suggest draining the beans because there was a lot of liquid in the final product. Served on flour tortillas with a side of canned Mexicorn. I thought this was different and good, but husband disagreed. Probably won't make again since he didn't care much for it. Thanks anyway!

Southwest Chicken Casserole

I made this recipe exactly as written, but with tuna instead of chicken. Also, I baked mine covered in the oven at 375 for about 25 minutes. This is a great weeknight dinner because it is so easy and quick. Next time I think I will try cream of chicken or celery soup. Very versatile. Thanks!

Oven Fries

I am on a quest to find a recipe for oven fries that we like. Unfortunately, this one isn't it. The fries weren't as crispy as I had hoped. I added some black pepper and garlic salt also, but I still thought the flavor was lacking something. The recipe didn't mention spraying the pan with cooking spray, so I didn't. Big mistake - although my fries weren't burnt, they were completely stuck to the pan. Thanks anyways!

Salsa Chicken

After all of the great reviews, I guess I was expecting something fabulous. This was just mediocre for us, even for a weeknight dinner. Hubby didn't like it much and asked me not to make it again. Oh well. Thanks anyway!

Stovetop Pinto Beans

Despite the name, this is actually more like chili. I used a can of chopped green chiles instead of the green pepper. I tasted it while it was simmering and thought it was a bit bland so I added some garlic powder and creole seasoning. This is an excellent weeknight meal because it's very easy to make using the canned ingredients. Thanks!

Slow Cooker Chicken and Dumplings

We thought this was terrible. I used 1 can of grands biscuits and put them in 90 minutes before serving time. The biscuits soaked up all of the sauce and all got stuck together in a giant chunk. I wish I had as much luck as everyone else. My husband took one bite and wouldn't even eat it. We picked out the chicken and tossed the rest. Thanks anyway.

Deviled Sausages

As a new cook, I wasn't quite sure what type of sausage to use, but I ended up using a beef smoked sausage. Served over homemade mashed potatoes. I thought it turned out fine and would have given it 4 stars because it is easy and quick. However, my husband said it tasted "weird" and he doesn't want to have it again so I went with only 3 stars. Fine...the leftovers are all mine!

Jen's Fresh and Spicy Salsa

I love this salsa! I have made this 4 times already. I took it to a work potluck this week and got many requests for the recipe. As others mentioned, it can be get a little watery. After I seed the tomatoes and chop them in my food processor, I let them sit in a strainer while I do the rest of the work. This helps make it less watery. Thanks!

Fisherman's Quick Fish

I was disappointed with this. I used ranch dressing as I had it on hand. I could not taste it all. The potato chips didn't add much flavor either. To me, this tasted almost the same as if I had just baked the fish plain. My husband took a couple of bites and then made a bologna sandwich! I saw all of the good reviews and was hoping for tasty new fish recipe. Funny how different everyone's tastes can be, LOL!

Salisbury Steak

These were okay, but nothing spectacular. My husband said they tasted a lot like meatloaf, but that he would've rather had a meatloaf! I liked the fact that the recipe didn't call for mushrooms since they are very unpopular at my house. I probably won't make this again.

Simple Time Pork Chops

My hubby and I both agreed this was just "okay." The chops came out a little too salty for my taste and my husband didn't care for the cheese and scraped it off. However, it was really easy and the prep time was quick so I do plan on making this again and tinkering around with some of the ingredients.

Antipasto Pasta Salad

Very good! Only made a few changes: used tri-color rotini pasta, added chopped cucumber, only 1 tomato, and only used 1 tbsp of the dried oregano. Also, I couldn't find asiago cheese at the store so I just used a shredded Italian blend. I served this for dinner with garlic breadsticks. Husband said it was very tasty! Adding to my collection. Thanks!

Spanish Rice II

This was pretty good. It was a little hotter than I prefer - I was sweating by the time dinner was over!! Definitely tasty, but might use less chili powder and even drain the sauce from the can of tomatoes before adding. My husband said he liked it better than the packaged rice I usually make. Thanks!

Stuffed Peppers

This is definitely a keeper! I only made a few of changes: I used 5 peppers instead of 6 and also substituted 1/4 cup chopped onion instead of the onion powder. I ran a little short on the tomato sauce for the last basting so I just used some spaghetti sauce I had in the fridge. Last few minutes of cooking I added fresh grated parmesan cheese and some shredded mozzarella to the the tops of the peppers. YUMMY! Thanks for sharing!

Breakfast Upside Down Cake

I only cook for 2 so I used 2 potatoes but I used 5 eggs. I cooked the bacon and veggies earlier in the day and then we had "breakfast for dinner". Next time I am going to try using cooked ham instead of bacon to save a little prep time. My husband also requested that I add chopped tomatoes next time. This was so good, thanks for sharing!

Tasty BBQ Corn on the Cob

BBQ Pork for Sandwiches

This was easy and tasty. I used a boneless pork shoulder roast as others mentioned and added some garlic. Used Sweet Baby Ray's. I cooked on low for about 10 hours and the meat shredded easily. Hubby wasn't as impressed as I was but he is a picky eater. Will make again.
