Chipotle Mayo

Use about half of this recipe and add 3 cups of shredded mild or sharp cheddar cheese and you have a Chipotle Cheese Spread that beats Pimiento Cheese hands down!

This was a wonderful change from the usual roast turkey! Everyone at our luncheon loved it. I slow roasted it overnight in a 250 degree electric roaster and served the olives on the side instead of cooking them with the turkey and had additional sauce from the bottom of the pan in a gravey boat for those who want more. I wasn't sure about the green olives with this but they seemed to be what made it outstanding! This will be my standard roast turkey recipe from now on. No more boring roast turkey around here!

Luscious Lemon Cheesecake

After I read all the reviews I decided to write my own. One of my girl friends had a wedding shower, and I (age 15) was asked to make a lemon cheesecake. After I decided to do this one, I changed a few things up and everyone loved it! I had people ask me for the recipe. Here are my revisions: The Filling, 2 Tbsp. of lemon juice not 1Tbsp, no lemon peel (I didn’t have any lemons) and 1 tsp. of lemon extract instead of vanilla. For the Topping, 1 tsp lemon extract/no vanilla. I also bake all my cheesecakes with a pan of hot water underneath so they don't crack.
